I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

I like the coriander roasted cauliflower recipe on bbcgoodfood, I add cumin and smoked paprika too though.

My dinner this evening; a bowl of blueberries, with one apricot, one peach, chopped, some ground linseeds and almonds, white grape juice and fresh lemon juice as the sauce ! Yum

Think going use rest of it(was big one) half mash for my meat eaters on shepherds pie.rest is go be cooked with spices and then add some flaked almonds. Served with dollop coconut yogurt and some rice

All these sound delicious. I'm struggling to find things my 4 year old will eat in general (Omni or vegan). 6 yr old tries most things and 6 month old is a blank canvas!

I think I'm going to try a toad in the hole with LM sausages tonight as it's something that fusspot will deign to put in her mouth!

I also struggle with time.

I've got vegan in 15 and 15 minute vegan but find that my kids won't eat most of the stuff in there, all a bit sophisticated! I hate using meat subs too often but am falling into that trap for speed

Wow, all these dishes and ingredients you are having on a Tuesday evening sound amazing!! Is this for a 'normal' night? They sound like dishes I'd make for a special occasion or if someone was coming over.

Spaghetti with fresh chop tomatoes,avocado and toasted seeds

zoo I wish! Actually my son would probably eat the spaghetti and pasta ones (without the avocado). My 4 year old is the queen of fuss. I struggle to think of anything remotely interesting that she'll eat. But that's her problem and I am going to make meals regardless! Will Def try the chickpea pasta - do you just stir in a can at the end?

BTW I popped into waitrose today for almond milk and saw almond breeze to a calcium+ "with extra calcium" and a Batista dairy free milk.both new to me...

Yes it's improving all the time, we're lucky here we can get the best almond milk I've ever had, It's called Amandina and the ingredients
are spring water, 6.5% organic almonds and rice syrup. Made in France.

There's so many other things that I don't like in the normal stuff.

economymode you can buy chickpea (dried) pasta in some supermarkets. It is more expensive than wheat pasta (about £2.20 a bag) but my lot don't notice the difference (they aren't keen on pulses). If I make that with a nice pesto (roasted red pepper and almond or basil) or tomato sauce and a mix of the veg on the side that they will eat (broccoli/ corn on the cob or carrots, peas) I can feel they have ate fairly well. I usually do some garlic ciabatta on the side too using a drizzle EV olive oil instead of butter

I actually got some of that from Morrisons the other day, worm! The 4 year old won't always eat pasta (depends which way the wind is blowing) and I did a happy dance when she ate pasta pesto for the first time ever last week! I thought all kids loved pasta. I thought wrong...

That sounds lovely - so comforting. I had planned a big mezze but feeling " under the weather today" and depressed about the election so may resort to a pasta bake even though the sun has now come out here.

I made a lovely guacamole for lunch , even dh liked it. It had avocados, of course, and fresh garlic, basil, wasabi powder, olive oil, lemon juice and water with tahini. He didn't realise it was vegan Grin.

Last night I made a kinda falafel vibe with cumin,cinnamon,paprika and ginger added to chickpeas, sunflower seeds,tahini,stock powder,t.puree and fine chopped saute kale.dd2 inhaled them with little rice and some roasted sweet potatoes and mushrooms

stillliving They sound good, I could make them with white beans because chickpeas give me a belly ache. Did you fry them or bake ?
