@FarmerDramaLlama My son's best friend is from the US and he said cake and biscuit mixes are much more popular in the US , more so than here he thinks and lots of people have them as a regular store cupboard thing. I think they are getting more popular here , but my impression is people are / have been a bit snootier about them here ( let me know anyone if I'm wrong anyone on both counts ) If the US is her target market ( which I am sure it is ) it does make sense.
So I can see this would fit in with Love Meghan if she is going to be showing biscuits and cakes ( more than just that pinnacle of glamour - A Victoria Sponge. ). If she is trying to reach a mass audience then I can see the thinking - also I assume they have a decent shelf life so packaging , distribution , time on shop shelf is longer so easier for a large scale operation. And they can be easily elevated .

Edited to add - oops noticed you said pancakes not cake. My experience is pancakes are eaten more in the US - eg those thicker breakfast ones . In this house pancakes get made from scratch but only on Shrove Tuesday - if we remember. So thank you for reminding me - March 4th this year - coinciding with the NF release ! Brilliant marketing 😂
