Potato and Thyme griddle scones

250g (8oz) potato, chopped into 2cm (3/4") cubes and cooked in boiling water for 10 minutes
2 tablespoons buttermilk
50g (2oz) rice flour, plus a little extra for dusting
1 teaspoon gluten free baking powder
1 teaspoon fresh thyme, chopped
1 egg, beaten
pinch salt
a little oil and butter for cooking

Place the potato and buttermilk in a large bowl and mash together until smooth, then stir in the remaining ingredients. Bring the mixture together to form a ball. Tip out onto a surface dusted lightly with rice flour, roll into a round about 5mm (1/4") thick and cut into 6 triangles.

Brush a non stick frying pan with a little oil and add a knob of butter, then cook the scones for a few minutes on each side until golden. Serve with butter and cheese for a delicious lunch.

Fruity mango flapjacks

100g (3.5oz) soft light brown sugar
150g (5oz) butter
2 tablespoons golden syrup
200g (7oz) millet flakes
2 tablespoons mixed seeds, eg pumpkin and sunflower
75g (3oz) dried mango, roughly chopped

Melt the sugar, butter and syrup in a haevy-based pan, then stir in the remaining ingredients. Spoon the mixture into a 28cmx18cm (11"x7") non stick baking tin, press down lightly and place in a preheated oven, 150c, 300f, gas mark 2, for 30 minutes. Mark into 12 bars, then cool before removing from the tin.

I was wondering exactly the same thing - xanthan gum. Am going to look it up on ocado now, am supposed to be doing our shop now - DP gets John Lewis vouchers as part of his pay so we spend them on stocking up stuff each month at ocado.

Now why did I feel the need to explain myself then

Hey all - not been on cos DH has been away and I have been v busy with both kids. And then I have mostly been tired at end of day and going to bed early. I have missed him, if only cos I had to take the bins out myself

Mol has another cold I think, she has been sneezing and was weirdly quiet at bedtime, with raspy breathing. Oh dear. I hate it when she's poorly, it always makes me panic that there will be something really wrong and I will miss it.

Her sleep is a wee bit wonky too - she is waking up for about half an oz of milk - will only go back to sleep if is milk, not water, though half-one oz can't have anything to do with hunger. Think is just a habit. Is not so bad though, I can't be bothered for it to be an issue, will just wait for her to grow out of it.

Feel a bit anxious tonight, I hate it when she's ill [worry emoticon]

Hi Ellie, sorry to hear about Mol's cold , BabyBee has also had sneezing and a terribly noisy cough and raspy breath - I thought it might be bronchiolitis, a friend's baby had it and apparently they're still able to spread it for about three weeks after they get it - seen any sick babies recently?
I think I might take BabyBee to the GP tomorrow to have his chest listened to..it does seem to be very rattley

Every time she has a cold I convince myself it's bronchiolitis! I am a bit of a worry wort. Yes, we went to see my friend's twins and they both has ear infections, and were a bit snotty. But they were on anti-biotics so thought would be OK. Hope she doesn't get an ear infection. How do they spread anyway?

Don't know what was going on with R earlier - he cried softly, but not really upset (we even considered letting leaving him for a minute or two as he didn't even sound upset). Decided to check anyway - and he was covered in milky vomit! Had to change everything, wash the mattrass, his toys, his duvet, give him a bath, the lot! He seemed fine but tired, so we kept him with us for another hour or so, then took him back to bed and he's sleeping fine. It was probably just some wind that spectacularly backfired or something, but I've decided I'm def not one for controlled crying. Ever. (I think.)
