Hope you don't mind me jumping in cinnamon, but I have the book here (just been making cod with sweet potato and orange from it - weird, but Louis loved it
)
Annabel Karmel's Lovely Lentils
0.5 sm onion, chopped
100g carrot, chopped
15g celery, chopped
1 tbsp veg oil
50g split red lentils
200g sweet potato, peeled and chopped
400ml veg stock
Saute the onion, carrot and celery in the veg oil until softened. Add the lentils and sweet potato and pour over the stock. Bring to the boil then simmer, covered, for 20mins or until sweet potato and lentils are soft. Puree.
I added a clove of garlic with the onion as I'm addicted, and we watered some down and ate it as soup while Louis had his the first time. Just to warn you; make sure the lentils are well cooked as if they're underdone it'll make them farty.
