NI Protestants are famed for their tray bakes but which is the best traybake of all?

I’m thinking something crunchy and chocolatey, a tiffin like thing. But are there unchocolatey traybakes that I just haven’t been exposed to? Are they keeping all the best recipes to themselves, strictly to be eaten behind closed doors?

And does it get a bit competitive? Does Annie cast aspersions on Doris’ traybaking abilities?

Am thinking of making some malteser squares using one of the recipes posted earlier but using white chocolate rather than dark. May just be too sweet though....

I have just commenced traybaking. I found a jar of biscuits at the back of the cupboard that must have come from a very austere multipack at Christmas and suddenly thought that they could be much improved with melted butter. There is everything in there - Malted Milks, Digestives, Custard Creams, the lot!

Just have to decide what to put on top now.

I was in the Eurospar yesterday looking at traybakes, they're expensive to buy! Especially the Heatherlea ones. Even McVities do them now.

Coco I had a stroke of genius. Mocha on top. The hint of coffee makes children run away in disgust, therefore more for the grown ups Grin

I think you have to get them delivered, but delivery is free locally. I've just heard people rave about them, I haven't tried them myself yet, but it's definitely on my to do list Smile

@caperplips, Avoca in the city centre has good scones. It's a bit pricey and always busy but the food is lovely.

I’ve spoken to my mum, and she is going to look up the recipe for the lemon fudge slices and email it to me. She said she wouldn’t be able to convert it to grams, but I assured her we can all bake bilingually.

Would it be sacrilegious to make Fifteens and spread the mix on to a tray?? You could still cut into 5x 3 'squares'?

To be fair, many traybakes aren’t technically traybakes (because of the no baking). But I get what you’re saying. Locally, we tend to refer to traybakes as homebakes.

Never having put those two together I'll not be able to unseparate them. Next years turkey won't be measure by M&S feed 8-10 people. It will be measured by bigger or smaller than my babies.

Just rtft and I am so homesick now Sad brought back so many memories - after school that was a cream cookie from the bakery on the way home Smile

One question - my nan (staunch Presbyterian) used to make the most wonderful coconut topped buns - but like the cheesecakes mentioned upthread but with a kind of coconut meringue topping - would anyone have the recipe for this by any chance?
