NI Protestants are famed for their tray bakes but which is the best traybake of all?

I’m thinking something crunchy and chocolatey, a tiffin like thing. But are there unchocolatey traybakes that I just haven’t been exposed to? Are they keeping all the best recipes to themselves, strictly to be eaten behind closed doors?

And does it get a bit competitive? Does Annie cast aspersions on Doris’ traybaking abilities?

The petrol station (or ‘filling station’ in traditional NI parlance) truly is the place to go to buy your traybakes - two big tables and a shelving unit devoted to traybakes and traybake affiliates in this one

Oh - and I went to my favourite local cafe, and they didn’t have any ginger fudge slice - I was traumatised, I tell you. I had to have a slice of chocolate cake with buttercream and salted caramel sauce to get over the shock.

Has anyone watched Songs of Praise tonight? It’s in Belfast, and features a cafe with an honesty box where you pay what you think is appropriate ‘We have teas, two types of freshly ground coffee, cakes, and...traybakes’! Love it :)

Try raspberry ruffle sweets instead of glacé cherries in the fifteens. Yum!

I come from the land of Dougies goodies bakery which is amazing & my mum does the best traybakes. They usually have 3 varieties on the go at their house as well as shortbread. On Friday they had shortbread, seed cake, marshmallow snowballs, peanut cookies & another random thing that had sultanas in it. Any wonder my dc (& me), love going to Granny's!

3out my DD's school is in church grounds and there is an honesty cafe in their parish community centre. Only one (very good) type of coffee though. There was massive amounts of baking donations that sadly couldn't be used because the home kitchens hadn't been inspected and approved. Some (pet-free) people are registering to have their kitchens inspected and some come into the cafe and bake there, so hopefully it will pick up again.

I'm slightly unclear at how a school cake sale is exempt from health and safety but a non-profit honesty cafe has to be compliant. Mind you, when I buy stuff from the school cake sale I will only eat my own biscuits as I know they haven't been touched by children (filthy creatures Wink ).

You guys are awesome. Have visited NI many times and am well aware of the traybake obsession.

Best thing is that our village show this year has a category for "3 slices of traybake, non-baked variety" and I am going to SMASH IT with all the fantastic recipes on this thread. Will probably be the size of a house by June mind.

On a baby name thread it has been stated that Protestants pronounce the H in Sarah as aitch but Cathollics pronounce it haitch when spelling it out for people.
Can somebody in NI confirm or deny please.

Inspired by this thread I just made DH a traybake as an Easter treat.

Bottom layer is banana flapjack.
Then a layer of caramel made from condensed milk and golden syrup.
Then desiccated coconut mixed with a tin of condensed milk and som3 glacé cherries.
Topped off with dark chocolate.
