I've started a new thread as the first one was taking so long to load (and also because I kept forgetting to change my Christmas name each time I posted!)

@TheSoundofMusic23 you are definitely on it! I've put in your 8lb loss, as I can't see why that wouldn't have been a real loss, but feel free to change if you need to.

Great to hear that things are going well for you @MetabolicallyComplicated - especially re the bleeding.

Congrats @Metabolicallycomplicated.
It's such a satisfying feeling isn't it!

Can someone point me at a cheese scone recipe using almond flour?
Going to a friends for dinner tonight and am taking the desert cheeseboard. Shes kindly cooking low carb for the 4 of us.
Internet keeps complicating it and I'm sure there's a recipe somewhere on here but my phone is not playing the "let me help you search for what you want" game today.

I'm now 3/4lb away from my next intermediate goal which is to get under 11st 10lb (ie "into 3 digits): half a pound down on Monday's weigh in at 11st 10.5lb. Smile

This is despite the twice baked cheese soufflé (with salad) I had yesterday out at lunch with old friends of my dad - it really was the lowest carb option (and it's very cheesy Wink) : the next best option would have been hot smoked salmon pate with oatcakes. Plus it's what used to be my dad's favourite (and I can understand why). I didn't have any of the farm made pastries though and drank loads of water Halo

Stunning view from the place though and we went for a nice wee walk along the old railway line in the valley afterwards.

Scotland?
Cold here so pleased that I got out of bed I and went for an early morning swim, followed by an omelette with cheese.
Shunned the pains au chocolates. Grin
Go me.
Full on week at work and really wanted a glass of red wine last night but binned that off too. That was hard.
Jeans are looser and my stomach is flatter. Also felt properly hungry this week - I don't normally notice when/if I'm hungry.

I miss the Scottish mountains. Ive been in Devon since 2005 and although I can see Dartmoor its just not the same.

@AllTheBlackCoffee I'm sure there is research to show that LC reduces the inflammation response by the body so in turn it should help improve eczema. There was an interesting article recently too showing they think that staph aureus is the cause of the itch in eczema. Hopefully the link works. Maybe they will be able to find a suitable treatment for this itch as I've seen my exH suffer terribly from it in the past.

Hi All. I've just updated myself on the spreadsheet. I became ill the first week of this bootcamp and decided not to start back on my low carb journey until I was well enough.
So I started at the end of week 1 and I'm pleased with what I've been able to shift so far. It's been good to read the posts here and to feel part of the club has helped my motivation even if my work's meant I can't post often.

Thanks to everyone who's participating. And big, big thanks to @BIWI for putting this together. It's a great way to start the New Year.

We’re eating out at our lovely local Italians tonight so going to fast until then I think, going to have a caprese salad with no balsamic to start and chicken a la crème with roasted veg for main, can’t wait!

Roast loin of pork for us tonight, which is one of my favourites. Swede purée and braised red cabbage to go with it, Yum yum yum!

I've got chicken thighs in tinned tomatoes, leeks, courgettes and mushrooms in the slow cooker for a quick and easy tea later when they boys are home. Lunch was lovely - a cheese, ham and mustard LC wrap which I brushed with melted butter and toasted in the airfryer to make it all crispy and lovely. Tasted just like the real thing.

I've been looking at the Seriously LC website as I'm planning for our half term holiday to Wales and think I'm going to take quite a few products to help keep me on track while I'm away. Has anyone tried the pizzas? We usually have pizza on the first night of our hols and wondering if one of those would scratch my itch while everyone else is tucking into takeaway.

Scales are staying put which I'll take as water hasn't been brilliant the last couple of days, at least they're not going back up! Trying to get as much in now as possibly difficult later on.
Omelette for breakfast about 10.30 as very hungry dinner booked for 5 so should just fit within my fast window. Tomorrow will be interesting as will need they from early evening until lunchtime.

@Metabolicallycomplicated what are the lowest carb options? You've done so well, and you CAN use that to keep your motivation up. How about crispy duck (just have the duck, spting onion and cucumber, not the pancakes and hoisin sauce). Swerve all the rice and noodles. Any soups on offer?Beef and grren pepper in black bean sauce - a bit carby but better than a sugary sweet and sour dish. Egg foo yung? Stir fry chicken, veg and cashews?

I had a big soup-making morning to deal with the veg box and the fridge left overs.

Cream of green veg in one pot: shallot, celery, cauliflower, cabbage, kale. Chicken stock. Plus all the left-over cooked veg (mostly same as previous but also green beans and leeks). Blended with a couple of hunks of rather sorry looking cheese.

In the other pot tomato and mediterranean veg: shallot, celery, tomatoes, courgettes. red pepper, black olives. Duck stock. Mmm

Food today:
Brunch - coffee with cream; bacon, creamy scrambled eggs, buttery mushrooms
D - confit duck legs, buttery cabbage, oven-roast tomato, creamed spinach.

Food for the next few days: Soup!!

I saw your post too late @Metabolicallycomplicated - but all I'll say for now is 'why?' Chinese food is pretty difficult to navigate from a LC perspective.

I can’t even think of what I’d have at a Chinese on keto, DH wanted to go to a Thai tonight and I said no for the same reason!

@AllTheBlackCoffee we make LC pizza using a cauliflower and mozzarella mix (mostly cauliflower) as the base.
In fact, we had it last night and it was delicious.

We're making the halloumi and broccoli dish tonight.
I can't remember who posted it, but the instructions say to put the grill on and then use the middle shelf of the oven.
The grill doesn't seem to be used at all???
Are we reading it wrong?

@LowCarbingIn2024 - this is the Donna Hay recipe that @Enchanted82 posted up (and which I'd written out the night before from memory)

It does say to grill in the middle of the ovenConfused

The recipe I have printed out is exactly the same but whoever posted it up (years ago) but have got it from a magazine as it was all on one page.

My plan was to have the duck without the pancakes and just some cucumber and spring onion with it but the duck was pre-mixed with hoisin Sad

There was precisely nothing I could eat, it was all
noodles, rice or sauces I couldn’t be sure what was in. I’ve never had that before, I’m usually an absolute master of making low carb work when out and about but there was just no way. So, I sat for an hour and a half and drank a COFFEE. In an all you can eat Chinese buffet which, pre low carb was basically my place of worship. Who says fat people have no self control eh???
