Thanks everyone - PILs are fortunate in that they have enough money to heat their home (it's like a sauna in there) and to eat, and to pay for some care. But not enough money/assets to pay for residential / nursing care. Nursing home closest to our house is lovely but requires evidence of 2 years finance before they accept anyone. I feel sad for PIL but more sad for my dh and SILs who are in the horns of a dilemma and in the meantime travelling 2 hours each way to visit and help out.
Anyway, back on topic, good to read people's food choices, some inspiring ideas and I've bought the Keto Kitchen book (delivered tomorrow I think). It looks like the puddings include lots of erythritol but luckily I've not got a sweet tooth so I'll probably not delve into that section much. @BIWI WHEN (not if) you write your book it would be lovely to have a dessert section that relied onthe natural sweetness of berries and cream, or coconut milk.
Food today:
B - coffee with cream
L - left over coleslaw with cheese and avocado
D - veg frittata/omelette with cheese and ham
Hmm.. maybe a lot of dairy, but refusing to go to the shops again
Tomorrow we've got a cook at home restaurant box which includes smoked cods roe mousse, cauliflower steaks with puree and truffle, duck with aubergine. And a rice pudding with rhubarb compote, so no rice for me. Plan to start cooking at 4pm so will eat it long and slow over the evening.
