Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

Been v quiet as so busy at the mo. Stuck to it, need to drink more water so have set reminders on my phone. Half a lb off this week, v happy with that.

I was at a family do at the weekend (very carb heavy on the food but had some chicken curry, cheese and chicken kebab type things with some salad bits I brought with me) and so many comments on how good I was looking. Slimmer (was wearing a dress I've not worn for ages as I looked pregnant in it) and my skin was glowing apparently 😁. Looking forward to seeing them all again at Christmas!!!

How old is your daughter, because I would be asking her to cook and prepare food herself if old enough. My 11 year old can chuck together a pasta dish for herself or thrown dinner in the oven.

Bit gutted with a 2.4lb weight gain. I keep re-reading the post about water in fat cells and am hoping for a whoosh this week.

Morning all. Happy to report a 0.5 kg weight loss.

If someone could put my current weight at 82.3 in the spreadsheet, I would be very grateful.
I used a ketosis stick last night; definitely in ketosis. I have been sticking religiously to plan, but I didn’t “feel” like I was shifting much weight/flab. Good to see I must be, but I suspect retaining a bit of water.
Re the M&S ham “crisps”. Not enjoying these at all. Strange plastic-like texture initially, then on chewing reduce to pulp. Also incredibly salty.
Only to be eaten in desperation.
Water water water!

Good morning all. Thanks for the new thread. Am a couple of pounds down this week, so am very happy. Still a long way to go though.
Dh is away for work this week so feeling a bit lonely already. Although I will get to cook all the things only I like and watch lots of trashy TV.
Am aiming to do lots of Pilates at home - would like to tone up a bit before Christmas as well as lose a few more pounds. Also need to go through the recipe threads as I tend to really like something and eat it continuously until I completely go off it! So need some new ideas.

I’ve lost 1lb !
Not much to get excited about you may think , but it means I’m the right side of 11 and a half stone
Being 10st 13 is my pre Christmas target , I think it’s doable

I've lost a smidgen over 1lb (I weigh in kg and then have to convert), so am pleased to have broken through the stall I had last week.

I've still not managed to get my hands on any of this mythical celeriac but I'll try again this week (I forgot to check when I did my online order last week) as that shepherds pie recipe sound delish!

This week I'm going to concentrate on ALL THE WATER as I've definitely been lacking on that front!

Morning everyone. I’m another who’s life is quite mundane so I don’t post much. Also feeling quite lethargic and waiting for that keto energy rush that hasn’t shown it’s face yet (I do get very low mood and lethargy during winter though). I’ve just moved on to a new hrt patch and hot flushes are back Angry

Happily I’m 2lb down on last week, which is great. I’m having less dairy, just a bit of cream in coffee which seems to be helping to reduce cravings. I’ve had a couple of squares of Godiva 90% chocolate at the weekend, it’s so nice.

Today is bacon, egg and mushrooms for brunch and pork loin (with all the lovely fat), celeriac chips and broccoli for dinner. Snacks will be egg mayo, smoked salmon, a few olives and avocado (not necessarily all together)

Morning all.
No weighing but I had a quick measure just now.
So far (since the April boot camp), I have lost:
1 1/4 inch from upper arm, neck and ankle.
4 inches from under bust, waist and hips.
I still have a long way to go - I might invest in some new scales soon.

I’m not struggling with the food at all but I need to drink more water.

No change for me today as I lost during the week.
Swanning around in some skinny jeans (so not trendy, I know) but I feel ace in them and they are not making me feel like a trusses up sausage!

Well done on The inch loss @BestIsWest. It really does make such a difference and the great news is they will still continue us to come off- they are for me 5 mo the in now, hence the jeans Smile

Today is omelette, big salad and then The pork I meant to do on Friday - for which I have the lovely sauce already prepped!

Morning all, I’ve stayed the same as well, but hoping for a whoosh soon 🤞like a previous poster I keep trying to visualise my fat cells filling up with water 💦
For those struggling with HRT it may be worth asking for a gel pump instead of patch, as that way it is much easier to alter the dose til you get it right for you, then once your sorted move back to patches.

@prettybird and also others who have got/recovering from COVID hope your feeling much better soon.

@NotwatchingSpooks thanks for the tip re HRT gel. I've been on the patches a while now but just recently I have been waking up v hot in the middle of the night again, and crying all over the place for no reason. I was going to ask my GP to give me stronger patches but might ask for gel instead.

3.3lb off this week which is great, and shows what happens when I don't neck all the booze and, once my willpower is drunk, dive into the crisp bowl BlushGrin

I’ve lost 7 lbs so far, I am really proud of myself. Just meal planning for the next couple of days. I don’t feel much slimmer, but I do have my period, tummy and boobs still huge, desperate to get into the next stone range. Can’t tell a difference in clothes yet. I have a Toast dress I want to fit into for Christmas. It’s a pull on over your head midi dress. I can get it on but my boobs are comically squashed and my arms feel like they could rip a seam. Another 7 lbs might do it.

I have STS this week but happy with that as may have had too much cheese which was definitely comfort eating. @prettybird I like the idea of using this week as a reset after being ill. I’m doing that too. Hope you are still feeling better but not overdoing it.

Food today is
L green soup which I made a big batch of yesterday.
D cabbage tagliatelle with mushrooms and Boursin. Should also have leaks in but I don’t have any. Might sub another veg but not sure what - onion probably. Any alternative ideas?

DH will have pasta as well. Last nights dinner made him gag so I am trying to give him something he likes today. He’s a fussy so and so and says he’s being polite about celeriac fries for some time. Gutted as I love them and so do DH and DD. Will just get some oven chips in the freezer and give DH them in future. Can’t believe how fussy he is.

Checking in with a very small loss after a weekend away with family.

My SiL is borderline for type 2 and told me about her new plan when our for coffee and cake with her DH, (both retired early so fairly frequent): choose which cake she would have had and put that exact amount into her pension savings! I like her style!

Also here for the love of Tim Riggins! Offering solidarity to Aderyn as my DH is away for three days- I bloody love it though! Planning Savoy cabbage carbonara and harissa halloumi sprouts for dinners while he's away and plenty of time to please myself. Only real downside is no chance to go to the gym due to sole charge of DS.

First on my list of things DH really wouldn't want to watch is Ladyboss on iPlayer, the Jackie Collins biopic.

Thanks for the new thread @BIWI. Really happy with 2lb loss. Even if I stick at 2lb weekly I'm still on track for 9. 7 stone for Christmas Day.

Lesson learnt from last week... daily weighing affects my mood. So am now sticking to Monday weighing only
Its all a learning curve I guess.

That’s a terrific loss, Motherbuckets and I agree—this way of eating is much better than The Drunk Willpower Plan.

TrueGrit no reason why you couldn’t manage another 7lbs before Christmas (and well done). Make sure you have a great-fitting bra.

And depending on how close you are to goal, consider having the dress altered to better suit your figure. Just a thought.

Jollyholibobs what, pray tell, was last night’s gag-worthy dinner?! At least your husband finally told you he can’t cope with celeriac—my in-laws were married for 45 years before he finally, sheepishly mentioned he loathes carrots, which of course she’d been cooking and serving for four decades. Ah, the British!

As for celeriac, our children were simply furious when—after having made dirty fries previously—my second version was BC friendly (Ragz’s Dirty Fries with celeriac) and they had not been told in advance! Oops.

I do this as well, Rayna, plan my own cinematic menu when husband is away. I mean, I could watch it when he’s here but we wouldn’t have much to share as he’d fall asleep. Much as I do when he dips into Million Dollar Motorhomes or motorbike racing (whatever it’s called).

I’m down .4lbs this week. Feeling lucky to have a loss.
