Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

That's how I cook my Savoy cabbage. Plenty of butter and be aware it does reduce quite a lot, so slice up plenty Grin

Add the butter from the start. It also helps add the moisture fit the steaming process of the microwave. Cover with a plate or cling film for both bursts of cooking.

These are the instructions I gave my niece, who asked for how I cooked the Savoy cabbage at Christmas Dinner

The Savoy cabbage? I thinly slice the cabbage (having cut out the thick central core) and microwave it with some butter (I think 2 x 2 minutes with a shoogle in the middle), then season with some salt and pepper and a wee bit of nutmeg. I mix through some chopped cooked streaky bacon - but only because that was on the turkey/pheasant.

Thanks @venusandmars. She would live on Super noodles if she could so it's a good idea to take this chance to say no to that. The funny thing is that we usually have 3-4 meat free days anyway! Just not what I'd bought for this week...

@JunieSpoony I went vegetarian at 16 and my mother took a similar approach to Venus. Helped me understand nutrition and think about my protein sources. You couldn’t easily by tofu then though I used to make it myself from soya beans!! I had a Saturday job in a restaurant at the time which always had a vegetarian dish on the menu. Unusual for 1979 so I got lots of inspiration. Started eating fish when expecting DD and still do but go off it a bit every time I go on a diving holiday!

The mere mention of the word shoogle has sent me to investigate whether there are any sprouts in the freezer. Although now I'm wondering whether I could roast them in the air fryer.

I just searched it a few minutes ago and Mumsnet was the first result!

And I have just made and eaten shoogled cabbage for a mid-afternoon snack (I'm in Canada). Yum.

@MotherBuckets I had to up my HRT dose recently as well, hope you get sorted soon. It was explained to me that HRT takes you back to the level of Oestrogen you were at before menopause symptoms. As we age the amount we naturally produce declines and so the amount needed to taken to fill the gap grows and therefore you need to adjust the amount of HRT required . Hope that helps. It took me about a month to get used to the increased dose.

@Wildheartsease could you get a few disposable roasting trays and do some tray bakes in them, I know it’s not good environmentally but hopefully this is a one off situation. Not having easy washing up is really difficult.

@FusionChefGeoff don’t give up you have done so well, give it a couple of days and you will be back down lower, it sounded really challenging, but just think how much worse it could have been without bootcamp

Not entirely sure how but I posted on the old chat!

Well done on all the amazing loss stories. I'm at the same weight as last week. Would be great if I can get below the 67kgs barrier as that's where I seem to be stuck.

Still veggie and cutting dairy as much as possible. But sugar cravings including alcohol are GONE.

Such a Good feeling.

Thanks @biwi I have read that before and it's 100% me I just don't seem able to put any of the action into place reliably. I'll keep trying though!

@venusandmars I have started with the Simple app again as I know the extra IF makes a massive difference for me too. And yes, there were lots of days which started on this woe eg high fat and ended with extra carbs so the worst of both worlds I guess.

And thanks everyone else for the motivational chats it's felt lovely to see my inbox pinging with mentions.

I also think my peri menopause is ramping up. I feel very snappy, teary, exhausted and quite overwhelmed with life today. I'm in bed with herbal tea and hoping tomorrow brings me more joy Smile

Oh forgot food:

L: Mackerel and avo salad (was hungry)
S: Egg then piece of chicken with Mayo and then piece of ham (was hungry at first but then greedy)
D: small portion of Spanish chicken concoction with braised cabbage. (Was not hungry but was family dinner time hence only small portion)
S: Greek yog with spoon of raspberries and double cream (was not hungry but wanted a pick me up)

Don't know if it will help trying to separate emotional from normal hunger here? The simple app also encourages you to think why you're eating - but it doesn't stop me doing it I just think "yes I'm bored and not at all hungry oh well I'm going to eat this plate of food anyway"

Just cba with today I need to go to sleep!

@FusionChefGeoff be kind to yourself. I recall that after major events I would imagine that I'd feel great and fist-pumping and so relaxed and refreshed and relieved. In reality, I've always crashed and felt crap.

So plan, plan, plan. Plan whatever helps you get back in the zone. Avocado, mozarella and tomato for brunch (apologies if this goes against the COP26 vibe), with some basil and parsley. Some eggs as a snack if you need them. Salmon wrapped in parma ham for dinner with spinach, and a couple of other favourite veg. Plan water. Plan to NOT have an evening treat (don't buy the 90% cocoa solid chocolate - if it's not there, you can't have it.) Drink water / peppermint tea / lemon and ginger / instead
