Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

I have thought about maintenance and how that works.

We can't go back to eating exactly as before unless we want the same problems as before.

Change is essential

The kind of change that you can live with is the thing to plan for.

BIWI's boot camp works for me:
-because the food is satisfying
-because the plan is simple and doesn't require counting or balancing compromises. (I don't have to think about what I can't eat today.)

In the future I will probably live low carb (I like it and it suits me) but find a simple way of allowing some higher carb meals/foods that doesn't lead straight back to constant hunger and weight gain. . (Perhaps only on feast days or perhaps only at weekends or perhaps only when out or eating at someone else's house.)

I'm in a maintenance phase and I've found I can eat a slice of cake or something off plan if I then do two days of strict BC. But I've stopped eating sugar altogether so I think I've had cake once in 6 months

@putthehamsterbackinitscage For me there would be no problem with having a very occasional thing like the bread with the Camembert but it is very easy to fall into the habit of far to frequent excuses to justify having unhealthy carby options and I need to remind myself that I don’t really like or need them. We are a bit brainwashed into thinking we need bread or biscuits with cheese but the cheese is the tasty bit. If you really want the bread then it’s hard because you feel deprived but if you think about the harm the bread does to you health physical and mental then it’s less appealing or downright unappealing. Then you don’t feel deprived and miserable but can rejoice in the delicious cheese. Doesn’t mean that you can’t occasionally have something carby. I’d try not to do this in a restaurant but in a someone’s home out of politeness. I’ve definitely not cracked it but I think mindset is key. Others on here have much more wisdom to share. Good luck.

Morning all, I have kept a low profile whilst the Drama 🎭 was occurring 🤭

I am definitely slimmer although scales hoovering at same range for the last few weeks, know that if I keep to it there will gradually inch (😂) down.

Was the drama down to a misunderstanding of the term 'boot camp'?

You can see how our supportive - discussy -imaginative-quietly determined thread might not have lived up to the expectations of one looking for a new :
-A shouty sergeant-major type in charge (BIWI ????).

-A REAL big stick to beat us out of bed for exercise and humiliation before breakfast
-Regular role calls before eating ( novices trembling as we present our meagre meals for approval)?
-Weekly witch-hunts with the full-fat-roasting of offenders...

I do remember being on a bootcamp thread a few years ago and noone ever, ever responding to my posts 😂 I think when things like that happen (by accident rather than design!) people might get offended.

Just discovered St Agur blue cheese spread - delicious.
I am getting more impressed with the unprepossesing celeriac - truly looks like livestock feed. However,boiled up is soothing else & it does a good “ mashed potato” disguise.
Can any BCers recommend other celeriac recipes?
Also issuing hot chocolate. I notice unsweetened almond milk has less than 1g carb/100g. Any LC recipes that BCers can recommend?
I am thinking of experimenting by trying a food, and then using a ketosis stick 8-12 hrs later to see if ketosis is affected.

Theo Randal was doing something interesting with celeriac on Saturday Kitchen this morning
3 tbsp olive oil
1 celeriac, peeled and cut into 1cm/½in cubes
1 garlic clove, chopped
1 tsp finely chopped fresh thyme
To cook the celeriac, heat the olive oil in a large heavy-based saucepan, then add the celeriac, garlic and chopped thyme. Season with salt and pepper and cook for 5 minutes, stirring often. Place a lid on the pan, turn the heat down and cook gently for 20 minutes. The celeriac should be tender and slightly caramelised.

Slice celraiac into chips. Toss with olive oil paprika garlic powder and salt. Roast in the oven for about 30 mins. Yum

Just wanted to say thanks everyone for your posts in response to mine.
I have tried the low carb bread already and do really rate it.

Most of them time I am very happy to eat this way, but I think I'm worried that if I go out for a meal and have wine that it kind of gets me back to square 1 in terms of blood sugar / insulin etc. is that the case. Will the occasional thing off this WOE set me back a long way even if it's occasional ?
I just don't know what the long term looks like I guess. If I eat this way 95% of the time is that enough??

Oh the irony of finally wanting to tuck things in only to find everything has an elasticated waist! I think I'm the generation that never wore things tucked in but now when it seems to be both the fashion AND something I'd consider doing, elasticated waistbands galore!^^

Also, linked to this, if 5'3" is the average female height in the UK (seen this stat a few times recently) why do I need short/petite trousers?!

M&S have always been my go-to for work due to good range of short lengths but didn't see anything I even wanted to try on ready for a new year re-stock. I was thrilled to find my conveniently located large store now has a range of other brands though like a department store (which we're lacking here). Hobbs, Jaeger, White Stuff, all sorts. Who knew probably everyone else!

I'm doing a "no new clothes" 2021 which has been weirdly fun and I've got much better at sourcing 2nd hand. Basics though I'm probably going to want some new- jumpers, T-shirts etc.

And on to the slightly more pertinent...
Survived yet another kids birthday party, snaffled a cheese portion and ignored the cookies, definitely in the zone there. Didn't eat until lunch and had a great treat of scrambled eggs, smoked salmon and avocado.
Dinner will be roasted harissa aubergine and tomatoes with pork belly. Yum! Done my supermarket shop and all ready to make a Christmas cake soon- at least I can't eat that yet!

Moanranger you don't need to be in ketosis to lose weight so I wouldn't bother. Also those ketosis sticks aren't very useful since drinking a lot of water dilutes the amount of ketones in the urine so a blood reader is needed to get an accurate result. I don't like being in deep ketosis; it makes me feel weird and jittery. For hot chocolate I'd try 1 tsp cocoa powder, 50 ml double cream and topped up with unsweetened almond milk. If your palate has adjusted to low carb then the lactose in the cream will sweeten it enough for you.

My hot choc is usually green and blacks cocoa powder, almond milk warmed and cream added at the end. I may add a dash of vanilla extract if I’m feeling extravagant!

I had a lovely dinner tonight, quite random: baked cabbage recipe from the keto recipe book and then I did loaded cauliflower tato skins with mashed cauli, butter, cheese, crispy bacon and chives, baked in The oven. I did loaded potatoes for the others and you could t tell the difference. Had a sour cream/chive dip alongside. Very tasty!

Keep it up everyone, the whooshes and nsv’s will keep on coming!

@missfliss the odd 'indiscretion' certainly won't set you back to square 1. That would only really happen if you fall off the wagon in a major way and continue to do so.

The long term is difficult to be specific about, because everyone has different levels of carbohydrate that they can tolerate, so one of the 'tricks' of maintenance is to find out what you can and can't eat, without gaining weight.

Not eating things like bread/pasta/rice/potatoes does, genuinely, become a habit. I very rarely think about those, and certainly don't buy them to cook with (at least not for me/DH on a day-to-day basis). Every now and then, generally when I'm out, I might treat myself to a bowl of pasta or a pizza - but then it's all about knowing that the next day I have to be careful not to give in to any carb cravings that arise!

One thing that really does help, though, is cooking the same thing for everyone in the family. I always get a bit worried when Bootcampers reveal that they're cooking separately for themselves - and continuing to serve up carbs to their partners and/or children. (Children are slightly different, I acknowledge, as including more carbs in their diet isn't going to be an issue.). But my philosophy is that if I'm cooking, they eat what I'm cooking. So things like potatoes or rice or pasta or flour-thickened sauces/gravies simply don't feature in the dishes I cook.

SN I do know you don’t have to be in ketosis to lose weight. But one thing I have learned is that too much dairy stalls weight loss for me. I am sure other people are different. I thought by using ketosis sticks, I could test what foods move me out of ketosis.
Re St Agur JolliH I spread it on celery or cold cuts.

I bought ‘swoodles’ in Tesco today -swede noodles. The recommendations are to use them instead of pasta or noodles. Has anyone tried them?

Love the word swoodles, that's a new one on me! Haven't tried them but did pick up some sort of long life vacuum packed cauli/broccoli rice today which I haven't seen before. Will report back!
