Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

@ShagMeRiggins just celeriac fries. except they were actually oven baked as you know I like to call things what they are not. Grin He’s light weight. Tbh I was relieved when he told me what his press as he appeared to be having a very funny turn. Was worried ge was seriously ill. Glad he’s just a fussy what’s it.

Well after my 2 weeks with too many 'onsite' compromises, late night snack attacks, no running and one disastrous carby binge when I got home I am up 5lbs from before I went away. Which was 5lbs up from my lowest bootcamp weight earlier this summer.

Sigh.

Seems this woe is not as sustainable for me and my head as other, more normal, people.

Still I'm not launching into the bread and pasta just yet but not sure what I need to do to my psychology to stop stuffing my face when I'm not at all hungry. It's not as simple as someone saying 'just don't eat if you're not hungry' and it's starting to get me down why it's not that simple.

Like right now - just had a lovely mackerel and avocado salad. Am definitely full. But there's a very loud voice yelling at me to eat some of the boiled eggs with Mayo that are in the fridge.

Have started the Why We Eat Too Much book to see if that helps.

@Dellabob123 well done on the jeans! As it happens I just went to change (into something warmer) and found an old pair of jeans in the wardrobe which now fit me. They are ‘slim bootcut’ which I’m told are now back in fashion - but these are from last time round Grin.

@FusionChefGeoff stop panicking! If you had a carby binge when you got home, all that you've done is to re-fill your glycogen stores. It won't be fat. You'll soon get that gone now you're home/back to your normal routine.

Re your other issue, I'm not sure I can really help here - it's all part of the emotional issues that surround food, and it's hard to get past those. The only practical (i.e. rational/logical) thing I could suggest is to buy less/have less available in the fridge, so that there isn't anything there calling to you. (I have no idea how feasible that would be for you though).

I think I've posted this link before but don't know if there's anything here that resonates with you, or that you think might help?

Two reps more than I’ve done, though I’m practically preening to have managed six squats in a row this morning.

Shocking myself with how seriously weak I am, and loving the one step at a time approach. No pressure, just one more each day. I don’t care if it takes me six months to get to X number of squats—at least I’ll have gotten there.

Just stand up while you’re watching it, tighten your arse as much as possible, hold for a slow count of five, relax, then go again as many times as you can bear.

For those old enough to remember The Body Principal (by Victoria Principal aka Pam in Dallas), she’s a strong believer there is always something you can do to exercise while you’re actually doing something else!

Hell, just stand up and march in place until the programme is over.

That’s exactly what I’m going to do. If I do the same reps tomorrow and the day after, that’s fine, but at least I’m doing something.
I’m hopeful the strength will come and can increase and make a habit.

FusionChef ffs stop beating yourself up.

Do you not realise that after a mackerel and avocado salad, the fact that you want to snack on a boiled egg and mayo is actually a Non-Scale Victory?!!!

Not a pie, not an entire bag of crisps, not 10 snickers bars...a boiled egg with Mayo.

First thing is that since you’ve been away and have necessarily had to eat off plan, the carbohydrate munchies will be kicking in so your appetite might feel bigger for a day or two.

Second, what BIWI said about the glucose thing—don’t be down about the 5lbs, they’re almost certainly not real, not fat.

Stick scrupulously to strict Bootcamp this week, forget about portions or snacks, and see what happens in seven shiny days!

The only other thing that comes to mind is an egg fast, but I think it’s too early for that kind of reset at this stage.

Weight up this week (week 4)... I have stuck to the plan despite all temptation and hope this is water filling up fat cells :) . I have faith.

FLGV is usually easy (soups for lunch and baked fresh veg with dinner) but harder in our no-cook/no prepare zone at present. Bagged salads are not quite hitting the spot.

@FusionChefGeoff don’t panic it’s just a blip. Try not to let it get you down and get back on the wagon. It’s so much easier to say… I know. I can relate to emotional eating problem and the frustration. This WOE definitely helps. I could not moderate alcohol so I have given up all together. Nearly 3 years ago. I am trying to do them same with certain trigger foods. This time last year I thought that this WOE had solved it for me and I was feeling so great to be free of it. But I realise it’s still a work in progress. I’ve deleted the second part of this post as it was unhelpful beating myself up about stuff. I realise I need to be calmer and kinder to myself. Oh and having some knitting the go helps me a lot as well.

Jolly I’m really pleased you deleted the self-bashing portion of your message if it made you feel more positive to do so, but remember you can always do a cri de coeur here if you need to!

I’m halfway through my WATER WATER WATER for the day but trying to hit target before dinner at 7.00pm because last night I had not one, not two, oh no not even three, but four fecking trips to the loo whilst trying to sleep. Highly unusual but incredibly annoying.

@Wildheartsease keep the faith, sounds like you are doing brilliantly. I do know what you mean about bagged salads not always hitting the spot. I've taken to driving round snacking out of a bag of spinach on long journeys. Which is quite weird, but gets my LGV up.

3lbs down this week, chuffed, chuffed, chuffed. Cheeseburger pie and green salad for dinner. Have got some coleslaw to go with it, but is pretty high carb, so will only have a bit. Must find the recipe for homemade in the boot camp threads.

Absolutely that’s progress. I also have wrist ankle weights, a thigh master, an exercise bike, a treadmill, some Pilates bands, one of those big workout balls, a Callanetics video, and a Figure 8 video. They’re all in my studio and I enjoy looking at them while I lie on the sofa watching tennis on Prime Video.

Sometimes I get off the sofa and remove the dust and spiderwebs from the display, sometimes even spiders themselves (Fuck off, Charlotte), and congratulate myself for being so good at purchasing exercise stuff.

But...I don’t have a balance board. Will have to order one now to add to the collection...

(I’m not that bad. But I have been in the past.)

We are mid-process just now but also at work.

We began with plans for access and organised materials/food to use during the work but discovered that things were worse than expected as we uncovered the walls.

All ground floor rooms contain cupboard contents/tools/blocks of uncut kitchen surface or part constructed cupboards ...and much plaster/saw dust! We inch around the muddle while the unexpected plastering dries. Eating or preparing food is done on a lap.

The oven is in place and working but there is no sink or tap yet - no spare surfaces - and we have to use a bathroom to get jugs of water for a kettle.

I could cook- am used to roughing it a bit when camping - but finding things to use in the unexpected extra muddle and managing without prep space is stressful.

There was much excitment this morning - over the finding of an egg, a pan and enough water to boil.

ShagMeRiggins have the dress altered! Have the dress altered! I ain’t no quitter. I am staying on bootcamps until I have got rid of my blubber tyre and dress hangs off me like it used to all of 3 years ago. Seriously it’s one of those dresses Toast do a version of every year so I could just go up a size or two but nope, not doing it. I love the dress (my family don’t get it), I feel quite Jane Eyrish in it.

Just booked family summer holiday, cottage on beach in Pembrokeshire. It took me over 2 hours to find someplace with a free week. Cannot believe how solidly booked summer in Cornwall/Devon is, I love Pembrokeshire so excited about that.

Dinner is chicken, celeriac, cream and Parmesan side dish and steamed cabbage.

Up half a pound for me. Hope it's just because my digestive system is taking a few days to adjust to not having daily bran flakes.

@Glenthebattleostrich she's 14 so she does cook. It's more a sensory thing anyway so she should mostly be fine with the sauce part and an egg or two instead of the meat chunk. Just wish she'd announced it earlier than while we unpacked the shopping Grin

@JunieSpoony when my dc stopped eating meat (in their teens) we had big conversations about what they would eat instead. Which protein replacement - fish? tofu? beans? Also I insisted that if they were VEGetarians that they actually ate veg. You can't have cereal for breakfast, cheese sandwich and chocolate mousse for lunch, pizza with a smear of tomato for tea. You need to eat 5-7 portions of real veg.

Fortunately both dc did (and still do eat fish) so that we can have some great family meals together. We also had a couple of non-meat family meals each week. And on the other days we negotiated around who did/didn't eat meat and what the alternative was.

Still, 100% get your frustration about the timing!

@PastramiNoRye can you list what you've been eating, maybe over a 3 day period, and perhaps people can suggest ways of upping your fat, upping your water, maybe deceasing your dairy...

@KeyLimePies (and others) you don't need to have an exciting life to post on here. I probably post the highlights (of what has been an unusually sociable time) but my highlight yesterday was spring-cleaning my linen cupboard!! Before everyone starts imagining me as an having OCD or being a neat freak, for both myself and dh, this was the first time ever in our combined 120 years of life, that either of us have ever done such a thing. Which just goes to show that even when you're 60 you can still have new and 'exciting' experiences!! Grin Grin

@FusionChefGeoff lots of others have given advice. I know from experience how exhausting and challenging it can be to be away from home and in the midst of a major event. It's possible that you were in the difficult zone of your normal high fat woe, plus unavoidable higher carbs. That's a difficult combination. But, I'm pretty sure that if you can stick to this strictly that those 5lb will be gone in 2 weeks. At the end of the day, it's not a race, we all have to manage this alongside a real life with real challenges and pressures.

However, when I'm in maintenance, when I have a meal of higher carbs (pulses or beans or peas) I also have lower fat that day.

And if I'm trying to get back into the 'zone' after some extra carbs, I find that the intermittent fasting apporaches help. So whenever you decide your mealtimes are, the rest of the time 'The Kitchen Is Closed'.

Our meal out to a seafood restaurant last night was very disappointing. It's reknowned place which seems to be suffering badly from staff shortages. Great oysters, some nice mussels, very, very overpriced seafood platter that I just could not bring myself to order and everything else was battered and fried.

However, brunch today was my cabbage and leek version of kedgeree (cabbedgeree). And dinner is fried halloumi with caper and corriander dressing and salad.
