Week 5 Pre-Christmas Low Carb Bootcamp

Evening/morning all (depending on what time you’re reading this!)

As ever, here’s the link to The Spreadsheet of Fabulousness.

We now enter week 5. Hopefully we’re through the doldrums of weeks 3 & 4, and you should start to see the scales moving for you again. Remember that we’re still doing strict Bootcamp during the week (you are, aren’t you? Hmm), only relaxing things a little at the weekend.

I’m also hopeful that by now this WOE is becoming more of a habit for you – if you’re new to low carbing – and that you’re enjoying it, rather than feeling that you’re on a deprivation diet. (If ever you’re wondering about this, just pop over to any of the low calorie threads in the weight loss section, and see just how different the posts/themes are on those – very rarely are they about enjoying delicious food!).

If you haven’t already done so, please go and check out the recipe threads, which are stickied at the top of the Low Carb Bootcamp topic. There are some fantastic recipes there, and even if you don’t choose any of them, they should give you some inspiration for your own cooking.

For this week’s recipe, I’ve chosen something very comforting. I’ve been reading various weather forecasts which say we’re in for some cold weather over the next couple of weeks, so this seemed appropriate:

Low Carb Shepherd's Pie

serves 6

3 large/5 small leeks (about the number you will get in a pack from Sainsbury) sliced
1/2 head of celery, sliced
500g beef mince (not lean - go for a high fat mince)
1 OXO cube
1 whole celeriac, peeled and chopped into chunks
2 banana/echalion shallots (Sainsbury's sell these - long and thin rather than round - but I guess ordinary shallots would be fine - you need around 75g)
Grated cheese

  • Fry your beef first, in olive oil in a large frying pan, and season with salt, pepper and when browned, crumble in the OXO cube
  • In a large saucepan, fry the leeks and celery in butter with a splash of olive oil (Adding the oil helps to prevent the butter from burning)
  • When softened, add the mince and then cover with water and simmer for 30 minutes, with the pan lid on
  • After 30 minutes, take the lid off and reduce the amount of liquid (it needs to be reasonably dry - but do this to your own taste)
  • While the meat is cooking, boil your celeriac in a large pan of salted water, till tender - this will take 20-25 minutes
  • Drain and mash - either by hand or with a stick blender.
  • Thinly slice the shallots and fry gently till nicely browned, in butter with a splash of oil, then mix into the mash
  • Put the meat into an oven-proof dish and spread the mash on top of it. Top with the grated cheese and bake for around 20 minutes in a hot oven until the cheese is browned.

32g for the whole thing; 5.4g carbs per portion if serving 6 people.

The specific weights of the veg I used, if you want to be really anal about carb counts (!) were:

leeks - 427g
celery 213g
celeriac - 596g
shallots - 78g

and an OXO cube is 1.8g carbs.

One final thing

I always make a plea, at the start of each Bootcamp, that posters read all the posts on the thread. Not only is it poor thread etiquette not to, but it’s also very frustrating when people post or ask about things that have been written about, or linked to, earlier in the thread.

I’m not going to name any names (yet!) but it’s very obvious when this happens. And also, by not reading all the posts you miss out on so much key information!

@BIWI you are brill, as are all the other seasoned Bootcampers. I really appreciate all your advice and encouragement, I even appreciate the big stick 😉

Moving swiftly on… I had butter chicken with cauliflower rice for dinner, which was really good. My appetite has definitely decreased and there is much less snacking in the KeyLime household this week.

Anyway… much gratitude from this newbie to all of the seasoned and the new bootcampers. I’ve changed completely how I eat, I have lost 10lbs in weight already and have tons more energy. Thanks for all the inspiration, advice and information, it’s really appreciated.

Tonight for dinner we had Jamie’s ricotta fritters mentioned a few threads back, lovely! Definitely took longer than 15 minutes to cook Grin

Well I for one am confused - she followed the advice, lost a stone (amazing!!!) and then.... is cross because other people aren't losing as fast?!! So is leaving the thread in protest of others not being as successful as she was?!

I don't know if the deleted posts would make it make more sense but still, like Pam in Gavin and Stacey "it's all the drama Mick, I love it" Grin

All on plan today just switched meals so leftover Spanish chicken with braised fennel cabbage and roasted low carb squash for lunch.

Salad with chicken, egg and avo for dinner.

Couple of spoons of peanut butter, spoon of raspberries and double cream.

Fasting started at 8pm need to make tea / get water which involves going into the kitchen - wish me luck!

Oh, and huge moment (for me) earlier was about to sit down with coffee and macademia nuts, fully realising I wasn't hungry but planning on eating them anyway. Then I walked back into the kitchen and put them away! Small victory.

😂😂😂. I find the same with all his recipes although I think loads of them really great and tasty

Not sure what all that was about 🤷‍♀️ I don’t post much as I’ve lost the bulk of my weight (like @prettybird I lost 3st in my first 6 months). I fluctuate between 10 and 11st and I am right at the top of that at the moment - stressful times at work and HRT / early menopause are really messing me about. However even though I’m not losing a lot I carry on because I LOVE this way of eating…. Good, wholesome, proper food that is tasty and satisfying and doesn’t leave you feeling like a bloated sloth. I also love the advice, the camaraderie and the humour that runs through the boards. Im not much of a chatter (that’ll be my autistic very introverted scientific personality) but I take a lot from these boards and I am really grateful for all the work and time that goes into them. The boards work because of the sage advice and (sometimes) hard truths given out by the stalwarts and the input of the newer folk / lurkers - the sum is far greater than the parts. And @ShagMeRiggins your posts make me laugh out loud and I didn’t think you were saying anything remotely out of turn with your spidery treadmill comments!

Dinner today was definitely fuel rather than food - yellow sticker basa fillets from Tesco (disappointingly bland despite being covered in ginger, soy and chili) and half a - shocked - cabbage (poor DH). I might treat myself to a creamy coffee while we watch bake off (it’s on record for when he’s finished putting the DC to bed). It’s getting nippy up here so the fire is on and it’s cosy. I was out on the mountain bike earlier and the autumn leaves and colours were amazing :-)

Polished off slow cooked chilli with cauli rice, sour cream and grated cheese. Was selfish.

@H1Drangea I can definitely recommend the chicken Alfredo - absolutely gorgeous.

I think I might give that recipe a try tomorrow @BIWI, sounds right up my street, thank you.

Oh, and I managed another two sets of the kettlebell throw thingies. Building up slowlyGrin

I'm off to have my proper 'on my own' session at the gym tomorrow. I've had a couple of intro sessions with the trainers there, but will have to find my own way around all the machinery!

Lots of nice-sounding dinners. @Jollyholibobs, your mushroom pizzas look amazing.

I too am having chili and have just been to buy cauliflower rice. However, it's all stuck together in one frozen chunk. Should I cook all at one and reheat the leftovers (looks like two portions total) or defrost it and cook it separately each time?

I've also made cornbread to stop the DC necking all the chili.

I'm now going to search for these ricotta fritters.

I'd cook it all at once - it will keep well anyway, and saves you having to cook it twice!

@JunieSpoony make sure you fry your cauli rice with lots of butter. It's much nicer than just steaming / microwaving.

THE BEST cauliflower cheese tonight thanks to all the recipe suggestions.

I will do that, @FusionChefGeoff. It turns out it’s a microwave-in-the-bag thing but will fry. Actually I was surprised my local shop (bigger than a corner shop but very small for a supermarket) even had it, so that’s a bonus.

Then I walked back into the kitchen and put them away! Small victory. @FusionChefGeoff I think it's fair to say that is a BIG victory. It marks the possbility that you CAN change ingrained habits and patterns.

@Dellabob123 'selfish' is good when you make all the food that you want and like, and then eat it all. 'Selfish' is particularly good when you leave the others eating pasta.

@BIWI that cardamom chicken recipe looks great. Might try to fit it into menu planning for later this week.

Now to weigh in (ha!) on today's bizarre postings... My first ever bootcamp I bounced in all fresh faced and enthusiastic, full of my 'knowledge' of keto diets and recipes... Thwack!! That was the big stick hitting me for not reading the bootcamp rules (if I recall correctly my first post included a recipe for fat bombs with peanuts and erythritol) . I nearly flounced on my first day leaving with some pithy sarcastic put down, but in reality creeping away ashamed with my tail between my legs, and feeling wounded

I am so glad that I got through that.

Over many bootcamps these threads have become my inspiration for food and eating, in a way that is good for my health. For me this is about blood pressure control rather than weight loss. I don't need to lose a stone in 4 weeks - that's not where I am on my journey.

On these threads I have found a population who love food and flavour, who delight equally in the sharing of 7 course tasting menus AND the decription of an excellent scrambled eggs. Posters offer help for those who can take 2 hours to prepare the perfect butter chicken and also those who have 3 minutes to grab something from M&S in a station.

But/And in addition (and important for me) this woe appeals to the biochemist in me. It make sense. I like exploring the science and (hopefully) being able to use that to encourage others on the thread, to add to the collective knowledge that we all have.

If one poster is likely to shout about WATER, I am likely to provoke questions about their veg intake. We all have our own 'thing'.

My thing is definitely NOT exercise. Nothing hot, nothing sweaty, nothing out of breath. Yet this year (2021) my average daily steps are 16000. Nothing extreme, not the traditional 'diet and exercise'. Rather a way of eating (woe) and a way of living and moving (wolam) that integrates into my life for the long term.

I raise my metaphorical glass to everyone who is on this journey - new / long term; young / old; loads to lose / approaching maintanance. Which ever point we are on at this moment, we ARE all in this together. And we are better together.

Faced with @JunieSpoony’s frozen lump I would probably have whacked it with something heavy to see if it would shatter into smaller portions. Glad others with more sensible suggestions appeared before me. I have had a few kitchen implement breakages and personal injuries with my technique so don’t actually recommend it.
