This Bootcamp has gone crazy! I'm very hopeful that means that the results on the scales/with the tape measure etc will have been positive.

I love this week. For so many, it's a total vindication as well as complete reassurance that this WOE really works!

I hope, very much, that the scales are kind to you and look forward to hearing everyone's progress.

@nowlook I'm self employed too, and when I feel like I can't be bothered I give myself one easily-achievable task to do (so I've started on my list). Then I go out for a long walk with another couple of tasks in my head and mentally write the answers ready for when I come back. If I'm still stuck, I try to repeat the cycle. Then at least at the end of the day I've got 2 small tasks done, I've given good consideration to 3/4 more, and I've had some exercise which is all better than sitting on my arse browsing mumsnet and pining for biscuits

@LittleMy77 if you're sick of cream / dairy you can have olive oil, avocado, coconut cream... And if you like mushrooms, you could hae mushroom soup for breakfast.

My well dodgy scales might have settled down a little, and I have to trust them until I get new ones. So I'm recording 1.2 pounds down, which seems about right for my post-menopausal trajectory.

In contrast to my usual veg for breakfast, veg for lunch, veg for tea, I'm going way off piste so I can have a bit of carby haggis tonight.

B - creamy coffee
L - boiled eggs with butter and mayonnaise and a small amount of salad
D - haggis, neeps, (no tatties) mushroom sauce, cavolo nero (that well known scottish vegetable!)

Back on track tomorrow.

Can anyone urgently tell me the cauliflower cheese recipe please! Supposed to be cooking it in about 10 mins and can't find it despite lots of scrolling back!!

So inspiring to see all the weight loss. I'm going to weigh on Wednesday as I started last Wednesday. At some point I'll have to have a three day week to get back aligned with Monday weigh in but didn't want to do it on the first week as wanted to see what I could lose.

@flossiegrippiter I made it for the first time the other day. Boil the cauliflower and in a separate pan heat some butter, add double cream and when starting to bubble add some grated cheese (I choose cheddar), mixing the whole time until cheese all melted. Put the cauliflower in a dish, pour cheese sauce over give it all a good mix and then sprinkle more cheese on top. Pop in oven until too has browned.

I'm sure there's other ways but this was my way and I must say it tasted divine!

There is indeed, @cheeseisthebest! I think you'll find it on the recipe thread.

However, here's a version of it:

  • remove leaves and stalk and break cauliflower into florets; boil in salted water till just tender - around 7 minutes depending on the size of the florets. Drain and let them steam dry
  • take a medium pot of double cream (300ml) if there are 2-3 of you, if more than that, use a large pot (600ml). Bring it to the boil, gently, in a saucepan and then add as much grated mature cheddar as you like. At least half a block, if not more - entirely up to you
  • let the cheese melt into the cream, then season with black pepper and add the juice of half a lemon (trust me, that really works)
  • put your cauliflower into a baking dish and then pour the sauce over the top. If you like, you can cover the top with more grated cheese. Bake in a medium hot oven until the top is nicely browned.

I had glorious food today!

L: chestnut mushroom and truffle oil omelette with a dressed salad (just a basic vinaigrette)

D: chicken thighs with celeriac and leek mash/ spinach with shallots.

The celeriac and leek fully lived up to the hype; the spinach is the tastiest way I've found of having it. Soften chopped shallots in butter, wilt spinach, salt liberally!

I keep my coffee mug out of shot and keep topping up from a bottle of water. It just looks like I take my own sweet time over a gold blend. In fairness, I've occasionally done that with wine if it's an evening call GrinGrin

I've just had a "leftover Burns supper" meal: the leftover creamed neeps (had a bit of a disaster cooking the neeps yesterday as I tried a not shortcut by microwaving the diced neeps which made them go rubbery. Ended up doing an emergency boil of the remainder of the neep and then blitzing in the food processor rather than mashing them both) with a beaten egg and a loaf of Parmesan and then microwaved, plus the leftover creamed celeriac (which did work being blitzed in the processor and a loaf of cream added), while dh also had leftover reheated haggis Halo

Watching the Tom Kerridge "Lose Weight and Get Fit with Tom Kerridge". Hmm

It's really irritating me Angry: having written the Dopamine Diet book and lauded the benefits of HFLC, this is all about counting calories and low fat substitutes Confused. He's just done a blueberry yoghurt dessert using "zero fat Greek yoghurt" Hmm

@ruple no, you just whack the radishes straight in the oven. I did mine for about 25 minutes at 200. They are so small that they cook really quickly and the water evaporates out.

Don’t expect 100% potato taste but I find in a roast dinner, they really hit the spot of something a bit soft and stodgy-feeling, particularly when covered in gravy.

They’re also good just salted and eaten like crisps - and I imagine divine with butter. I enjoy them pickled too - on toast with butter - but that was back before LC!

Although yes, cutting them up is a bit of a labour of love.

@NotwatchingSpooks I wish it was swishing about - its work and a hotel - where there its room service only - its such a depressing place when all the shops are shut - I miss the hustle and bustle of London - its not the same!!

Back at the hotel and today has been OK - considering options were limited:

B - Bacon, sausage, mushroom, tomatoes and fried egg
L - One packet of salami, one packet of cheese slices
W - 2 litres - pathetic
C - 2 and one green tea - may have a camomile one later
D - Chicken, bacon and Avocado salad - olive oil all over it, with mayonnaise and a salmon fillet

not enough green veg - but based on a random corner shop as the only provider of lunch it was salami and cheese (so processed) or a baguette with chicken tikka!

Tomorrow will be the same, I will try and drink more water!

Shocking food day here.

B - Greek yoghurt, double cream & cinnamon
L - Cheeseburger pie with cucumber
D - Greek yoghurt, double cream & cinnamon

I've struggled to eat today as I didn't sleep again last night and am all out of sync with myself, however in good news I received a phone call tonight from my physio to say he's landed me a double face to face appointment at the hospital tomorrow! I've not had physio face to face app since March last year and I'm no better than I was then - so this is bloody great news and I'm far more excited about it than is normal!

Well done to all that had good losses and for those who didn't see the number they would have like to see KOKO, we need to keep the faith!

Here you go:
  • one pouch of (cooked) Riced Cauliflower
  • 10g grated Parmesan
  • one egg
  • seasoning Mixed and made into a pizza shape. 10 mins in the oven (each side) then add toppings

Sounds a lot easier!

She didn't say how she'd cooked the cauliflower rice, but I'm guessing it would have been fried?

@BIWI ooh thanks! That does sound easier. Shall give it a try. Wonder if it's microwave rather than fry but will fry both thanks!
