an '20 - Week 5 Low Carb Bootcamp - Onwards and downwards!

Welcome to week 5 of the Low Carb Bootcamp; we're nearly halfway through! If you've had a pause in your weight loss during week 3 or week 4, the scales should hopefully be moving again now and you can expect an average weight loss of half a pound to 2 lb each week. Nobody ever gets consistent weight loss from week to week so try not to get hung up on each week's weigh-in, it's the overall trend that we want to look at. If you're a daily weigher then try an app such as Happy Scales or True Weight that uses a rolling daily average to give you a more accurate record of your weight loss.

Add today's weight to the Spreadsheet of Fabulousness. And here's to another great week...

*what info Hmm

ShagMeRiggins · 15/02/2020 19:06

The popped cheese looks intriguing Teapot and while poking around recipes for it I came across this for keto nachos.

Others might have similar recipes, might even be in the recipe threads, but what’s not to like about crisp triangles of layered emmenthal, bacon, and cheddar dipped into a salsa or guacamole?

Brassica I could do with at least three days of calories, plus macros in the form of grams of carbs, protein and fat. Your height and current weight would be useful too. You can PM them to me if you don't want to share on the thread.

At last! I managed to find a place that would make me omelette - and it had mushrooms, cheese and green peppers too :) Finding it really difficult on holiday to find things with enough fat, and to find any vegetable that isn't a carrot or a potato. We've been doing long walks every day so not eating from breakfast to about 4pm. The breakfast buffets are laden with all kinds of cakes and breads and honeys and sweet fruit. There's sometimes egg, and there's some not very nice meats and cheese. My walking companions all have sandwiches and fruit to keep them going. I drink water. And the main alternative to carb-laden dinners is grilled fish and salad.

I'm loving the sunshine, I'm loving the fresh air and long walks, but I miss my vegetables and I miss my butter

BrassicaBabe · 15/02/2020 19:17

Thanks Stunt. I don't mind sharing. I might save until later in the week as I'm going to Uber for 3 days Monday to Wednesday.

Rayna37 · 16/02/2020 08:03

Lovely date night meal out but too much red wine and a few things Not BC. Good day planned today and lots of water to get back on track for tomorrow's weigh^^ in.

TheClitterati · 16/02/2020 08:56

@moleeye I have ackee & saltfish ingredients in but have never made it before. Do you have a good recipe?

Don't know if I will find a scotch bonnet around here. Maybe Waitrose?

BrassicaBabe · 16/02/2020 08:57

A quick UberBC question. The menu is 3 meals a day for 3 days. Follow that menu unaltered? I normally do 2 meals and 16:8. Happy fo follow as written if that's what's best...

moleeye · 16/02/2020 09:09

@TheClitterati I use a Levi Roots recipe but I've modified it! Have added the link and detailed how I cook it

www.goodtoknow.co.uk/recipes/levi-roots-ackee-saltfish

-rinse the saltfish in cold water and drain, then put in water and bring to the boil for about 10 mins then drain and repeat

-I fry a couple shallots and a bunch of spring onion til translucent add 2 or 3 chopped green peppers and half a red and half a yellow (I'm not precious on amounts)

-add a couple cloves of finely chopped garlic and as much or little scotch bonnet as you want (Levi adds chopped tomato and ginger at this point but I don't like it in my ackee)

-add the saltfish and flake through (I like mine chunky)

-drain the tin of ackee and add. Don't stir too much as the ackee will break up and turn to mulch!

Loads of black pepper and enjoy. I can eat it by the truck load 🙈

prettybird · 16/02/2020 09:32

Someone more knowledgeable will come along Brassicababe - it's a long time since I did an UberCamp and it was before 16:8/IF was "allowed" Wink

I'd do Day 1 as prescribed. If you find you can do it without problem, maybe consider missing/delaying/reducing "breakfast" on Days 2 and 3.

But I'm not the expert Wink

Like you, I like (and probably over use Blush) egg fasts to get the recalcitrant scales moving. The one advantage of the UberCamp over an egg fast is that, iirc, there isn't the same risk of a rebound when you return to "normal" eating.

BIWI · 16/02/2020 09:42

@BrassicaBabe - I put Ubercamp together before we started talking about IF! If you're happy with only 2 meals a day then no need to increase it to three.

@TheClitterati Sainsbury's sell Scotch Bonnet chillies. But beware - they are amazingly, staggeringly hot! I like hot food (chicken vindaloo is my go to), but I'd only ever use half one of one in my cooking (and less than that if it's a large one)

prettybird · 16/02/2020 09:51

In case you don't know already, left over chillis freeze well and can be chopped from frozen.

Lionsleepstonight · 16/02/2020 10:01

We battened down the hatches yesterday for strom Dennis and to see me though the endless Disney movies and Monopoly I had some popcorn. Blush ive paid the price though as i became bloated, windy and nauseous! In pain and discomfort for the rest of the evening. Made me realise how much carbs do not suit me.

Teapotdespot · 16/02/2020 10:29

Popped cheese is AWESOME!

It’s not quite dry enough yet but I just did a test run at popping it, and it’s like the light crispiness of the air bubbles you get in packets of crisps, but pretty intense melted cheese flavour Grin

Drying them out for another 5 hours before the great poppening this afternoon Grin

BIWI · 16/02/2020 10:52

Sounds like the start of a new business there @Teapotdespot!

Tenementfunster · 16/02/2020 11:02

I’ve weighed a day early and I’ve now lost 1st 3lbs since 6 January. Very happy, less than 3 st to go Smile
This thread is great, helpful and supportive so good luck to all xx

ShagMeRiggins · 16/02/2020 11:12

funster that’s fabulous. So well done!

Loving all the recipes. Looking at the avocado/sourdough I made for everyone this morning and wondering what would be the best delivery system for the remaining avocado that isn’t bread. Hmm

BIWI · 16/02/2020 11:12

Bacon?

Rayna37 · 16/02/2020 11:41

Riggins I like avocado in an omelette with cheese and black pepper.

ShagMeRiggins · 16/02/2020 12:47

Rayna that sounds good but it’s the bruschetta kind (Nigella, because I couldn’t figure out how to put avocado on toast all by myself) and has a fair bit of lime juice in the mix. I’m dubious/curious how lime and egg would work.

BIWI we do have some streaky bacon from this morning left over as well. Maybe will dip.

Elpheba · 16/02/2020 15:02

Can’t remember who suggested them- maybe @Teapotdespot amongst the popped cheese discussion?
But I just made cheesy/bacon crisp things and they were amazing. Just grated two types of hard cheese (50g each) and spread out on a tray with a piece of bacon chopped into tiny pieces spread over it. Baked for 10 mins, then cut it into triangles and grilled it for a few more minutes (on a new piece of parchment paper)
Blooming lovely- had them dipped into smushed avocado. Probably not an every day treat but a lovely change to nibble something crunchy while the rest of the family are scoffing popcorn!

ShagMeRiggins · 16/02/2020 16:49

Yay Elpheba it was ME ME ME who suggested it! (And you tell I’m not getting much positive attention today from the fam?).

Anyway, credit definitely due to Teapot and her Popped Cheese because I would never have found that recipe had I not been going down the internet rabbit hole.

It looked lush, glad to hear it is, glad to hear Teapot’s Popped Cheese is also a success, and must officially state none of us has an excuse for going off-piste on family film nights, etc.

Mostly, I’m soooo glad to have maybe found an alternative to my beloved dish of nachos—-doh!—and planning to layer spiced meat and avocado and cheese and some salsa, maybe jalapeños then even a bit more cheese until I make an approximation of gorgeous Tex Mex nachos (rather than the pissy UK version, sorry, or a few tortilla crisps and a few bits of grated cheese that isn’t even melted).

Almahart · 16/02/2020 18:51

Omg @ShagMeRiggins that sounds amazing!

BrassicaBabe · 16/02/2020 19:02

Take away night in our house. Unplanned as the day got away from us. I'd normally have kebab. They've sold out. So no take away for me. Sad Tuna and other stuff in the fridge instead.

Elpheba · 16/02/2020 19:58

@ShagMeRiggins YOU ARE AN ORACLE OF CHEESE 🧀
They were so delicious and I most definitely had a nacho addiction prior to this WOE so they were such a treat after so long without my crispy tortilla chips smothered in cheese, salsa, avocado and sour cream...
Hope you get to try them soon!
