Re intermittent fasting, I’m not sure I specifically aim for that but rarely have breakfast. I will have tea or coffee with almond milk, again not sure if that breaks the fast or not, and loads of water.
I have my best energy in the mornings these days, which is unusual for me historically. Today I had clients in all morning so am—as usual—hugely energised yet happily knackered, but not hungry.
Lunch will probably be tuna in oil mixed with mayonnaise (DeLouis is a favourite as it’s lower carb and more interestingly flavourful). I often add a few chopped cornichon and either shallots or red onions, sometimes water chestnuts, sometimes celery. Plopped on top of masses of raw spinach leaves, and sometimes flavoured again with fat in the form of homemade vinaigrette. So fat, flavour, and satisfying crunch.
Dinner will be seasoned cod cooked in butter and loads of kale, chopped cauliflower, maybe spinach if any left, maybe asparagus or broccoli, all fried in salted butter, the kind with crystals in it.
Butter and salt are my life, basically. Plus animal skin and fat cuts of meat (apologies to the vegetarians). I haven’t purchased lean mince in ages, 15-20% for me, thanks very much.
Trying to eat less red meat, more fish and chicken/pork, and could do with ramping up my vegetables. I do hate peeling and chopping.
But one thing my diet isn’t lacking in is healthy fats, and—again—I am rarely hungry.
