Happy Chinese New Year. We're in week 8, and 8 is considered a lucky number in Chinese, so hopefully this week will be a good one for us all Grin

Yolo I buy 500g packs of almond flour made by Carbzone (is £10 though! Shock)

Thanks for all the support. Just had a ridiculously early dinner of steak, celeriac mash and green veg. Feel pretty full now

I’ve not actually made them yet, thewayof I was all set but realised I had no eggs. The recipe simply says lots of cheese. I’ve put some chipotle chilli flakes in the dry mix, thought it would go well with the cheese. Eggs are due on the on line shop tonight

Just had my third visit to the Passport Office today to get my new passport - who knew it would be so bloody complicated?? - and I think, fingers crossed, that this time I've provided them with all the documentation they need to accept that I am who I say I am. All being well, I'll be able to go back next week and pick it up (I'm not leaving anything to chance with the post or couriers, not after all the trouble I've had so far), but until it's in my hot sticky little hand I'm not taking anything for granted.

Blood pressure and sugar levels have been sky high this week, unsurprisingly, so it's just as well I'm not needing to have them tested!

Food today:

B: Cheese omelette
D: Heck sausages with stir fry veg (celeriac rice, blitzed sprouts and broccoli, with chilli and soy sauce). Feeling happily full now. Bloody love those veg Grin

Posting a photo of the cheese scone recipe I use. The book is called The sugar-free family cookbook and I’ve made the scones and the warm chocolate brownies so far.

I get 9 scones rather than 6 out of the mixture, and if you don’t have any coconut flour you can use all almond flour or ground almonds.

I got my almond flour from H&B I think but also my local market has a great stall that sells all kinds of nuts, seeds, flours.

Thewayof the world if you are talking about the scones I have made them twice. They are to me quite nice but they are also a little crumbly so when cutting them in half you just need to let them cool down a bit first.

If anyone else loooves curry i can't recommend the India book by Pushpant Pesh enough. The recipes aren't particularly anglicised so have the actual quantities of oil, and lots are low carb/easily modified. My spicy tomato chicken called for 125g of ghee, it was wonderful!
Though use less chilli for most of the recipes. I love an extra hot chicken vindaloo but these recipes are hot!

Still logging away here! I feel that it just be v boring for everyone but it is transforming my boot camp experience. So this evening for snacks I’ve had a hunk of cheddar, a tiny glass of wine and two squares of the not very nice but low in carb chocolate

L: small portion of left over roast cauliflower with goats cheese with Greek yoghurt with 8 berries and 6 hazelnuts after
D: idiot proof moussaka with steamed spinach followed by 12.5g of 85% dark chocolate from Aldi (v low carb)
I shouldn’t have eaten the chocolate as I wasn’t actually hungry though but it was that or a glass of red wine so I thought it wasn’t that bad...

Really nice chunky beef chilli tonight (no beans) with grated cheese, kale and a very small portion of buckwheat groats. We used to have these periodically as a lower carb alternative to rice but I think I'd forgotten about them! I was going to just cook some for DH but when I checked the packet they were only about 15g carbs per 100g and sure enough a quick google confirmed they're actually a seed not a grain as I'd imagined! Nice nutty texture, we get them from Tesco and I think Waitrose, not seen them elsewhere.

Lots of good stuff it looks like BlackMozart - definitely a fair few things to try. I'm going to give the beef stroganoff a try soon. Can't believe someone gave it a low rating on Amazon due to lack of pictures Hmm

I have had a nightmare of a week - work, weather, unreasonable clients, etc etc. Food choices have also been severely compromised, which hasn't made me feel any better.

But it is what it is, as my brother often and irritatingly says! Grin

Sorry you've had such a bad week, BIWI. I've had a rather frustrating one, as everything except work has been cancelled due to snow!

Fortunately I'm very close to the shops and they have all been open, so I've been able to keep on track foodwise. Looks like the snow is starting to thaw this morning, so hopefully everything will be back to normal by this evening.

I completed a survey for Vintage Inns (one of our locals is one of these) and asked for more low carb options. They can't have read it yet as they just sent me a voucher for a free pudding, to say thank you Hmm
