A horribly busy week for me, so apologies if I'm not around quite so much Sad

Avoided all the sugar/carb laden goodies at the cinema this afternoon phew! I am hungry now though, so having some ham & cheese for a snack.

I have a celeriac lurking in the veg drawer, I am thinking about layering it with smoked salmon in a dauphiniose, it is so tasty.

I'm starting to wonder if DH is sabotaging me. We had black pudding topped with goats cheese and salad for lunch which is on the carby side anyway because of the black pudding then he made caramelised red onions to go with it. It was revolting, it was like eating black pudding with jam.

I've been wondering for some time, StuntNun, if he's consciously or unconsciously trying to sabotage you. After all, it's not like you've only just started low carbing is it?

I think he's just crap to be honest. He means well but can't be bothered to remember which foods are allowed. There's a packet of sweet potato fries in the fridge I notice. Hmm

Mmmm the celeriac/smoked salmon dauphinoise was wonderful! Had lovely well-roasted green beans (they taste fab roasted)

Ha! I have just had a slice of the coffee cake I made for DD's birthday. I have been planning this since the start of BC. First (and last) sugar. It was delicious, though I say so myself, and worth the blip it will inevitably cause. Grin

But it has brought home to me the fact that I don't think I will be able to stick to this woe long term. I'm a baker, I bake, it's part of who I am. I bake cakes, cookies, bread, especially sour dough, whatever. I can't imagine a future where I don't get to do that.

I hope to be able to stick with this woe until I have lost the weight I need to but realistically I'm going to need a maintenance program that includes some of the things I love.

Thankyou for the info on tea playbuce, and thankyou wombattoo for updating the spreadsheet for me.

I think I have survived my weekend away pretty well apart from wine. For those with train journeys coming up I can promise you your friends are. Pret, Leon (thanks BIWI I hadn't heard of it before and probably would not have gone in without your heads up) and M and S for cheesy snacks. I have three mini bries in hand for the last leg of my journey.

Lein do a courgetti dush which I didn't have time for but looked ok carbwise at a glance

I drank three bottles of the free water during my meeting today and two mint teas. Managed not to wee myself but I think others were concerned!

You have reminded me about the IPD cookbook, reggae, going to have a wee read through as I know there are some good ideas in there. I love the curried cauliflower soup - so easy to make with a bag of frozen cauli.

Food today:
B - 2 hb eggs, butter, coffee and cream
L - a non LC sausage at DSs school fayre plus 2 cups of tea with normal milk. But I did avoid all the home baking and the ice cream van!
D - courgetti and meatballs, lots of grated cheese on top
S - chunk or 2 of brie

Bought some pork belly slices the other day in great excitement about the new regime….

However - have never cooked them (or even eaten them, I think) so have zero idea what to do with them. Did a big of Googling and there seem to be loads of complicated recipes for rubs with millions of ingredients.

Can anyone inspire me with something relatively simple to make?

In other news - think I've lost a pound. Pretty pitiful, but better than nothing.

Just found this suggestion on an old thread:

what I do is sprinkle on some salt, fennel seeds and some chilli flakes and bung in low oven for hours and hours. This combo originated with Jamie Oliver I think. Fennel seeds go really well with pork and are trad Italian.

Can anyone vouch for it? Sounds pretty tasty.

I've never cooked the slices, so can't be of much help I'm afraid - but have you checked the recipe thread? There might be some recipes there.

I usually buy a whole piece of belly pork and roast that. It's totally lush!

We've had pork belly tonight. Drizzled with olive oil, sprinkled with salt and pepper, covered and cooked for two hours on low, then turned up high for the last 30 mins. It was lovely.

We put garlic paste on the slices and put them on 180/ 200 for about an hour.

Notdead I fry pork belly slices in lard then sprinkle some salt on them. Make sure you drain off the drippings to use to cook other things. Steak cooked in bacon or pork fat is amazing.

I've got pork belly for tomorrow (and probably leftovers for quite a bit of the week!). Going to do it with fennel and thyme and olive oil, maybe some chilli as suggested. Looking forward to it - I'm inspired by thread and also the amazing pork belly I had at a Japanese restaurant this week.

B: omelette with ham and cheese, Greek salad
L: tuna mayo, gherkins, radishes, cherry tomatoes
D: salmon fillet baked with pesto/cream/Parmesan on top, Bok Choi, tender stem broccoli
S: bit of shredded cheese. Fancying making myself a dessert but not
got any yoghurt or berries - so I'm thinking whipped cream with small amount of melted dark chocolate and hazelnut butter stirred in!

Cauli rice kedgeree. Undied smoked haddock doesn't really show up against the curry died cauli.

Just had this for dinner with duck breasts and broccoli. It was absolutely immense. You could not tell it was celeriac rather than potato.
