Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

Mine will be veggie, but it’s not often very exciting as I work full time so don’t get much time for cooking.

So far next week we’re having:
Thai green curry with tofu and asparagus

black bean soup with avocado and pickled red onions (dp will make the soup)

halloumi flatbreads with salad and tabbouleh

Finalised as:

Monday - veggie spaghetti bol (I use Merchant Gourmet lentils as my 'mince' plus courgettes and mushrooms)

Tuesday - halloumi flatbreads with salad

Weds - black bean soup

Thurs - Thai green curry

I love threads like this.
Today we used last of xmas bits. I made kids chicken and avocado salad. Had out rest of olives hummus pitta nachos etc and everyone had a bit of everything. I prefer veggie meals and my kids prefer meat so we often have different things

Tonight: spag bol. Me salmon and veg
Tomorrow: bbq chicken with rice and veg
Sunday: burritos for both of us but mine bean kids mince.
Monday: jacket potatoes with beans and cheese

Thats as far as ive got so far and going away thursday so will only need a few more. We are very much stuck in a rut meal wise its so hard finding things everyone likes. So I know this thread is going to be great for inspiration.

Right, trying to get on top of things. I'm looking at:

Steak and aubergine noodle platter (ala Jamie)
Baked chicken thighs on some sort of rice pilaf with as many extra veg as I can cram in!
Roasted veg with hummus and feta on flatbreads
Thai red curry chicken soup of some sort, or just a curry (still with lots of veg!)
Tuna fish cakes with a chopped mixed salad.
Soup with toasted sandwiches. Maybe butternut but I'll buy tinned tomato in case I can't be bothered to make soup! And/Or, halloumi flatbreads with charred greens and hot honey

These all sound great - so much veggie stuff.
Do people with the veggie dishes do these go young children? I’m stuck in a rut with my 3 & 6 year olds.

There's just me at home now...
Made a huge chicken curry today, so today and tomorrow chicken curry and rice.
And there's 4 portions left to go in the freezer.
Sun - pork chop roast potatoes, home-made app!e sauce and peas
Mon - pasta and Bolognese - again will be a big batch cook as my freezer needs refilling
Tues - chicken pineapple and ginger stir try with noodles
Wed - bacon chop grilled pineapple herby buttery new potatoes peas
Thurs - ginger salmon new potatoes peas

Cupboards tidied, meal plan done. Days undecided but we will be having:

  • bns curry with rice (will make lots and freeze)
  • black bean birria (ditto freezing)
  • gnocchi, poss the caramelised onion one someone posted on the last thread that I saved.
  • spaghetti puttanesca
  • salmon. Prob baked with lemon, with green veg and chips.
  • roasted mushrooms and cheesy polenta.

@RedLeicesterRedLeicester when DD was little, if she wanted meat outside the home that was fine but I never cooked/bought it, only the occasional piece of fish, so it was what she was used to. It took her a while to love some things, but I found that if there was enough of the tolerated foods she got more accepting of the veg, for example, with curry, she'd have had lots of rice and a bit of sauce. Once she got to about 8/9 and was out of the picky phase life got much easier!

Today - caramelised onion gnocchi gratin, with roasted tenderstem. DB is bringing pudding
Tomorrow - sausages, sweet potato mash and leek fritters
S - chilli bean corn bread cobbler
S - aubergine and lentil hot pot
M - pesto and red pepper orzotto
T - Thai salmon curry

Could I trouble you for the cobbler recipe? Sounds fab!

Ooh I’ve never seen this thread before. I always meal plan so I know what to buy, I think I’ve found my people! This is what we’re having this week. I have some joints of meat to use up in the freezer so slow cooking the pork and beef:

Creamy garlic tomato pasta with basil & spinach
One pot sesame garlic chicken
One tray roast chicken, veg and potatoes
BBQ pulled pork ciabattas with corn on the cob
Sausages, fried potatoes, onion gravy & veg
Beef bourguignon and crusty bread

M - prawn and courgette linguine
T - cottage pie
W - chicken fried rice
Th - jacket potatoes and salad
F - tuna steaks (moved from this week as there was pie leftovers for last night).

Weekend tbc as I don’t know what our plans are yet

Gone through veg boxes and fridges - have cancelled our veg box for the next two weeks as we have loads to use up. Made a vat of lentil, squash, carrot soup today.
No particular order:

  • Roast chicken, honey roasted carrots, mashed swede, mustardy cabbage
  • Keralan veg curry with beetroot and carrot raita
  • Winter minestrone
  • Celeriac tart
  • Pasta, chard, feta, chilli and garlic
  • Squash and chickpea tagine
  • 7 Veg tomato sauce for pasta
  • Kale pesto pasta
Sides: Lots of green salad Radishes Coleslaw Creamed kale Romanesco

Lunches:
Lentil soup from today
Thai Squash soup
Egg mayo

This will get adapted - too many pasta dishes I think - but will see us through two weeks at least I should think.

I am a massive fan of meal planning and do it 90% of the time:

Next few days:

  • Cheese flan (old school recipe!) and salad
  • Salmon, jasmine rice and stir fried broccoli and bean sprouts
  • Steak, Caesar salad and rice
  • Jacket Pots - tuna, beans, cheese. Etc
  • Chicken, peppers, onions fajitas. Usually just cook on a tray in the over. As way easier for a family of 5
  • Roast veg- sweet pot, peppers, aubergine, butternut squash. With a Greek salad and Quinoa or pasta salad for kids

Wednesday - FD/SYO (fast day for me, sort yourself out for the others)

Last night- Gochujang and coconut chicken brothy rice with wok fried greens .
Sunday - Dijon pork, rumbledethumps (made with brussel sprouts instead of cabbage), garlic spring greens.
Monday - Stanley Tucci’s Pasta Fagioli with garlic bread.
Tuesday - Huevos rancheros
Wednesday - Chicken tortilla soup
Thursday - Buffalo Chicken Caesar salad
Friday - Lamb kofta tray bake with tzatziki and salad.

My meal plan for the next week

M- chicken meatballs with orzo and kale

T- Fish, kale and veg curry with rice.

W -Harrissa fish cakes, sticky rice and green beans.

T- Roasted Veg and red pepper cous cous.

F- Chorizo and veg broth rice with flatbread

S- Mixed bean and halloumi burgers, sweet potato wedges with red cabbage slaw.

S- Lamb and rosemary steaks, roast mint potatoes and veg probably carrots,,cauliflower and broccoli.

For the cake tin this week:

Sweet potato chocolate brownies

Banana, walnut and date banana bread.

Lunches for work/ school will be:

Roasted chick pea,,avocado and red pepper wraps, kale and walnut pasta, home made chicken and veg soup with flatbreads. Cheese and veg muffins.

Wednesday: Mushroom Pad Thai
Thursday: Fasolakia
Friday: Going to theatre so not quite sure yet.
Still need to consider the weekend, but it's a start.

Yesterday- chicken nuggets, chips and beans (shopping order was late so it was all we had in!)

Today - pulled chicken enchiladas

W - cod with lemon butter sauce, roast potatoes and peas

T - Cheesy Sprouts (imagine Cauliflower cheese but Sprouts- we all love it!) With honey roast gammon

F - Takeaway

S - Homemade beef and ale pie, Mash and veg

S - Gammon roast dinner (meat, roast potatoes, Mash, Yorkshire puddings, Carrots, Parsnips and swede)
