We are on the final countdown to a couple of weeks away, with a LOT of stuff going on as DD has a big dance show, DS is prepping for exams and has various things on at school. And for various reasons I have friends popping in and out etc. So I need to be as smart about this as I can. Easy, convenient etc.

Tinight - whatever I can find in the freezer. Probably bolognaise. Also allows DD to eat leftovers on the go or her and DH can have on Thrsday when DS and I are out.

Pitas with halloumi and greens
Burgers and salad - DH can cook them as I'm having drinks with a friend
Jacket potatoes, with tuna and cream cheese.

Friday... we're off!

I didn’t defrost any salmon for tonight as I saw nice chicken wings when I was shopping on Saturday. - so buffalo wings and blue cheese dip and oven chips.

But they had both nice fresh spinach and broccoli, and new season cauliflower - so tomorrow is changed to cauliflower cheese (as a main) and I’ll do the salmon on Thursday with both spinach and brocolli.

Might still do lasagna on Friday as an easy meal (it’s a pre-made one)…and experiment with making focaccia if I actually finish work on time).

Just checking in to say that to my surprise I have stuck to the plan so far this week! Successfully getting though the freezer stuff.

HalloumiFries · 16/10/2026 09:06

Tomorrow: Chicken, chorizo and chickpeas with kale
Sunday: Stifado
Monday: Mexican chicken and black beans with rice
Tuesday: Chorizo broccoli pasta
Wednesday: Fabada
Thursday: Freezer surprise
Friday: Falafel, Greek salad and flatbreads

Trying to use up freezer stuff this week, which makes it a little more meat heavy then I would like.

RemusLupinsBiggestGroupie · 16/10/2026 10:11

We’re out tonight, so just cheese and biscuits before we go.

Tomorrow- pasta puttanesca

Sunday- Ottolenghi black pepper tofu with smashed cucumber salad/ pumpkin pie

Then I’m away for a couple of days again

Looking forward to some cooking when I get back - I fancy a vegetable tagine and maybe a paneer curry

Tonight I am having half a duck breast (they are so big here I always freeze half), with baked yelllow courgette with a Parmesan and lemon panko crust, and roasted baby potatoes.

Tomorrow I have a lamb knuckle and I’m torn between unseasonably good weather so roasted with Mediterranean veggies or doing it slow in a red wine traditional casserole type meal with carrots and maybe butternut squash and leeks.

Monday is pepperoni pizza. (I have good pepperoni from home and good mozarella for the top).

Tuesday is mushroom pasta parcels with mushroom sauce.

The rest of the week I’m home - with DH 3 nights and 1 work night. So I’ll see how badly he has the fridge stocked (it’s usually not great at the moment).

Im back here early Sunday but expect to be working so probably lamb rogan Josh with rice or spag Bol (both sauces from previous batches in freezer).

HalloumiFries · 26/10/2026 09:33

We're away for a couple of nights at the end of the week so have struggled to come up with meals for three nights only without waste or unfreezable leftovers, while still using up things from the fridge and pantry. It's therefore not a very exciting plan for me this week:

Tonight - Pasta with tomato/chorizo sauce
Tomorrow - Baked potatoes, tuna and cheese
Wednesday - Chicken escalopes, potatoes, carrots & peas.

Open to suggestions if anyone can think of anything better? I have pasta (various shapes), potatoes, basmati rice, bulgur wheat, various tinned pulses, chopped tomatoes, tuna, carrots, onions and around a quarter of a cooking chorizo. Frozen peas, spinach, portions of roast chicken, pork, bacon, pitta breads and breaded chicken escalopes.

I had beef bourginonne (M&S slow cooked) with mash last night
tonight I am having HM shepherds pie
tomorrow is salmon (probably steamed), baby potatoes (probably steamed) and sautéed leeks
Wednesday I am about for a work dinner
Thursday possibly a spag Bol (from freezer batch)
Friday I think I am eating as I travel as my flight is relatively early evening

yamsam · Yesterday 20:36

Yesterday: Chicken and veg pie, chips and green beans. Just made the filling and chucked a sheet of puff pastry on top—nice and easy

Today: Meatball pasta bake with garlic bread. Was meant to have broccoli with it, but forgot to boil it, so cucumber slices made an appearance as a last-minute “shit, we need some veg” addition

Tomorrow: Chicken arrabbiata soup with crusty tiger bread.

Friday: Pork and veg korma with rice and naan.

Saturday: Soup dumplings for me while everyone else has either pizza or hot dogs.
