Checking in for today
15 stone, so this morning was a 1 lb loss, giving 3lbs in two days, I know it's mostly water at this stage, but really pleased with that. Woke up very hungry though, but went swimming which helped to distract me until lunch.
Todays food
1pm lunch - black bean soup with avocado, yogurt, tomato and coriander
5pm snack - fresh apricot, greek yogurt, flax seed and chopped nuts
8.30pm dinner - tuna steak, stir fried veg with low carb peanut hoisin sauce
Comes in at 780 calories, which is good, as I feel like I've eaten quite a lot.
That lentil and aubergine moussaka sounds delicious, where did you get the recipe from please?
I think the recipe was originally from a South Beach Diet book, but I just sort of wing it these days. It's an onion softened, garlic, then two tins green lentils, two tins chopped tomatoes, Worcestershire sauce, stock cube, all simmered for about 15 mins then some fresh spinach mixed in.
I slice up two aubergine, brush with a little oil, then bake in the oven to soften. Then layer in an ovenproof dish with the lentil sauce, and pour over a mix of 200ml milk, 100g greek yogurt, 2 eggs and some nutmeg whisked together. Bake at 180 for about 40 mins .
It comes in at 1200 cals for the whole dish, and can do three or four portions, depending how hungry you are! It's a bit sloppy to serve, but tastes good, and I freeze extra portions for evenings when I don't have time to cook.
