Do you freeze the eggs whole (obviously not in their shell) or beat them first? I can imagine beating them and then freezing and using in scrambled egg or adding to cake mix. Do you do one egg per muffin case?

One per case and prick the yolk first too. Or beating will also work.

Today I've also bought some large tins of spinach (East End brand). I didn't realise you could buy tinned spinach and in the absence of fresh green vegetables it will be useful for adding to curries, making saag paneer etc. In fact paneer has a long fridge life too.

Perpetual Spinach is dead easy to grow - eat young leaves in salads. Literally a little pot on the window ledge if you don't have space outside.

Argh, I bought 24 eggs to freeze today but I've no room in the freezers for a muffin tray 😔

I was watching one of those doomsday preppers programmes on Netflix - only adding this so you can see it might not be a reliable source- which said if you cover an egg in oil and then just pop it back in the carton it can last up to 9 months. I can't vouch for it but other places on Google suggest it's a thing.

One per muffin case then pop out once frozen and bag up. I probably have a few dozen in my freezer now. Just crack into the muffin tin whole prick the yoke to stop it going rubbery? Then defrost for cooking, scrambled even poached/coddled. You can freeze yokes and white separate for recipes. Just defrost and use as normal. Frying only dish that’s not great.

I'm in the process of baking bread. I kneaded the bastard for 20 minutes before it was stretchy enough as per Mr Hollywood. Worked up a slight sweat. It's doing the slow rise thing. Hoping it turns out so we can have toast for breakfast tomorrow. Doorstops loaded with butter and jam Smile

I didn't even know you could buy tinned chicken 🤔.

I brought shed load of loo roll but actually we are already going through it, same with the pasta.

It's a lot darker than it should be despite being the correct temperature and in fir less time than the recipe stated. Might be the poppy seeds that have added to the colour. Not bad for a first loaf though I guess. Will leave it to cool then see what it's like later.

20 minutes kneading was worth it then. Smile

Been to Wilko's got the rest of the seeds, seed potatoes and canes to grow some veggies for the summer.

Looks good Bercow. I think the poppyseeds are making it look darker than it is. Google Richard Bertinet for a kneading technique that takes the pressure off the hands (and it’s theraputic if you’re a bit grumpy too)

Got the go ahead to grow shared veg at church.

Thanks for the tips Smile it has lots of flavour . I only cut the very end off, buttered it and we all had a bite. Dd1 tried to steal the whole loaf for her room. Little one wanted some for pudding. Middle one wanted some for supper. I kept them away from the process of making it as wanted to get a feel for everything. I'll be adding bread flour and yeast to my stockpile now.

That looks delicious!
I've made some sour dough bread today. It was a bit slower than usual to rise. I also picked the first of the rhubarb for a rather sharp crumble. Feeling very little house on the prairie.

I cleaned my shed earlier, found loads of poppy seeds I'd stored from the summer. No idea what to do with it all as they are ornamental poppies.
