Double we will not be continuing to do exactly the same as we do now though. We will be trading, hopefully, yes, but not within the terms of the many trade agreements that currently apply while we are a member of the EU. If we leave the EU there are, currently, no new bilateral UK/other trading nation agreements in place to govern the quality/standards/tariffs that are to be applied. So we either 'take on trust' any and all imports from suppliers no longer having to meet agreed trading terms or we stop and check.
You seem happy with the 'take on trust' option, others maybe not so much.

Sorry this might be a bit 'heavy' on this thread, but the Chinese have 'form' for making things badly. They make goods initially that are great, but if you do not keep VERY close watch there is a possibility of faulty or dangerous components being used. Chocolate, a subject close to many MN heart (and waist) now made by USA companies using palm oil. Not a danger as such, just crap!

The EU imports most from China as do we. They import from them on WTO rules as do we and as we will do in the future. So no difference there. So what's the problem?

The EU has one set of tariffs (to which we are currently part).
We leave the EU and we drop to NO tariff deals. I forget the rate but I believe around a 10 percent immediate hike in prices.
To negotiate WTO tariff deals takes around 10 years if they are not too difficult and ALL the other members agree. With the USA, Australia and others raising possible objections already that road will be a lot longer.

To make a 'WTO deal' it is not for example UK talking to China, it is UK talking to China but with all the other countries who deal with China having their say on 'our' deal and participate in discussing what our 'deal' might be. It is incredibly complicated.
If you go to Tesco to do your shopping and ask for a 'discount' when you want 20 tins of beans. OK you COULD do this. In WTO trade rules, the managers of ASDA, Sainsbury's and Waitrose would also come along and say that your deal might be discriminatory and be able to force their wishes onto 'your' deal.

The trend for almonds to make almond milk is destroying parts of California. Water usage to grow them is outrageous, 1,600 litres of 'decent' water to make 1 litre of 'almond milk'.

If we leave the SM and CU you are incorrect that goods import and export processing will be the same as they are today.

Non EU GOODS
Unless we are part of EFTA all non EU goods would revert to WTO rules which are inferior to what we have today. Tariffs higher and processes worse. This is because we leave trade agreements with 60 countries such as China and the US which currently facilitate trade. This will make trade with these more expensive.

EU Goods - Deal
If there is a deal then I suppose everything stays somewhat the same as there will be a 20 month transition. I say somewhat because I think some autos for ex wouldn't be able to be exported anymore under rules of origin.

Thereafter we would probably have an FTA which is an enhanced WTO trading regime so worse than today but better than with say China.

EU Goods - No Deal.
We revert to WTO terms which are painful. All docs to be checked. And some cargoes inspected. Overnight. On 50% of our trade.

The above only covers goods trade. Missing are services, meds, nuclear fuel, security, isotopes etc

If you want to be jolly in the run up to Brexit, be careful which bank of sand you stick your head in around the coast. Most are tidal. You could go abroad in the EU while we still don't have to get visas or join long queues.
