I need inspiration.

mine is a cheeseburger salad. Shredded lettuce, pickled red onions (homemade so they’re exactly how I like them), a bit of cheddar cheese, sauces of your choice and some fried beef mince. If I’m feeling gluttonous I’ll add some bacon too. It feels so decadent but takes ten minutes to make!

Chicken thighs, air fried. Then a large mixed salad with small amount of macaroni size pasta mixed in with a light dressing 😋

Decent quality chilli con carne (that comes without rice as it's much better value) bulked up with chopped pepper and frozen sweetcorn, - 'authentic curries and world food' or 'cook food' single portions will easily feed 2 adults.
Mashed avocado
Chopped up tomorrow
Nachos with grated cheese on (done in microwave)
Boiled rice
Sour cream.
Takes the time it takes for the rice to cook to prepare the whole meal.

And I also like a cheeseburger salad! I saw a version online recently that was cheeseburger loaded potatoes, same vibe but on a bed of air fried potatoes.

Tuna cheese baked potato. Potato microwaved for 5 mins and then air fried for 15.

I came to say homemade beans on toast: Tin of beans, bit of chopped onion, a dash of liquid stock, dash of tomato paste, pinch of chilli, tin of chopped tomatoes - all just bunged in a pot and simmered.

Served on toast with a bit of grated cheddar! Yum!

The baking takes a while but throwing it all in the pot is under 1 minute, and then you don't even need to stir them.

How lazy?

Home made pesto (seconds in the hand mixer), spaghetti, grated parmesan and salad bits chopped in, swirled in pan the spaghetti was cooked in.

Chicken skewers from Iceland (loads of varieties) in the air fryer with microwave rice pouch and frozen veg or salad. Takes minutes and is really filling but low fat.

I love smashed avocado on sourdough with plenty of lime, garlic and chilli, chopped up tomatoes and a poached egg on top. Even better with a few rashers of streaky bacon on the side.

Sweet potato microwaved with cut up tomatoes fried or quickly microwaved and wilted spinach with a big dollop of shop bought humous on top - sometimes with half a tin of chick peas as well - maybe a bit of harissa if I have it on top

This is my go to when my family all want pasta which my body dislikes

Probs my feta cheese pasta.

Block of feta in a roasting tray, a load of cherry tomatoes chucked round it, some chopped basil and olive oil.

Bake in the oven for about 40 minutes cook some pasta and mix altogether.

Poached eggs on wholemeal toast with purple prouting broccoli.
Spaghetti with a garlic, olive oil and chopped mushrooms and a liberal sprinkling of parmesan.

I have something similar I call, 'everything but the bun' burger.

Patties with cheese, fried onion, mushrooms, chopped spinach, sometimes a fried egg or bacon, homemade tomato relish and red slaw.

Something else I've done recently along the same lines a pasta free, keto lasagne.

Fry beef mince to brown with garlic and herbs. Add tomato puree with a little water. Layer in a small baking dish.

Make keto cheese sauce. Butter, cream and lots of cheese melted together. Pour over the top and bake to brown the cheese. Sometimes I add pan cooked green beans in a layer between. The meat and cheese.
