I need inspiration.

mine is a cheeseburger salad. Shredded lettuce, pickled red onions (homemade so they’re exactly how I like them), a bit of cheddar cheese, sauces of your choice and some fried beef mince. If I’m feeling gluttonous I’ll add some bacon too. It feels so decadent but takes ten minutes to make!

OK I’m ashamed. Turns out you’re all way less lazy than me. If I’m alone and want something relatively healthy I’ll eat a tin of tuna. Or a drained can of chickpeas with salt and pepper on. Occasionally I might have a couple of cherry toms with it. 😂

courgette ribbons, onions and peppers in olive oil until almost soft, with a tbl spoon of Parmesan and a pinch of chilli flakes per person, stirred through cooked pasta , using a bit of the pasta water and saltnpepper to make a sauce.

Swede and courgette cooked in oil and salt and herbs in a pan until it goes all brown and caramelised. Served alongside some form of fish usually but occasionally with an egg.

2 cups rice
4 cups frozen mixed veg
added to rice cooker and ignored

Chop a block of tofu, add to Tupperware with soy sauce and chilli oil. Shake.

When rice cooker says 10 minutes to go, add the tofu to a pan on medium heat.

Add the tofu to the rice when it’s done.

Options to elevate: better tofu marinade, chopped raw veg to top (cucumber, radish, carrot), sesame seeds, some chopped garlic in the pan first etc.

Smash burger with low fat mince
air fried potatoes
mixed salad

potatoes take 20 mins to cook chip style, rest takes max 10 mins. Chuck a plastic cheese slice on the burger and add sauce and it feels decadent but is healthy balanced and quick!

Shakshuka, I do a sort of Mexican version with spicy beans and throw in some frozen peppers & onions.
Spicy tuna rice bowl- tin of tuna, one pot of veetee sticky rice, sliced cucumber and avocado, edamame, spring onions. Dress with soy sauce, chilli oil/sriracha. Most people add mayo but I usually skip it.

Probs my feta cheese pasta.

Block of feta in a roasting tray, a load of cherry tomatoes chucked round it, some chopped basil and olive oil.

Bake in the oven for about 40 minutes cook some pasta and mix altogether.

No, it's not you! Loads of these meals aren't lazy at all, they're proper cooking albeit relatively simple. People just aren't admitting when they stand over the sink eating a rotisserie chicken out of the bag with their hands.

Tuna pasta bake:
Any wheatfree pasta cooked, tin of tuna, mashed avocado, cooked peas/beans, nutritional yeast, pesto, 0%Greek yoghurt, stir together, top with buffalo mozzarella, grill or .microwave until cheese is melted.

Pesto pasta is the easiest, boil some pasta, stir in some pesto, throw in some pine nuts, grate some Parmesan on top, job done.

One of those microwave grain pouches with some air fried veg and then some halloumi or feta or falafel or hummus depending on what's in the fridge. Drizzle of tahini and extra virgin olive oil, throw on some nuts and some pickles. One of my favourites and done in 20 minutes.

An acquired taste but…mine is a packet of microwave vegetable rice with a can of sardines in tomato sauce on the top with some Worcester sauce for extra flavour/juice. Ready in 2 mins and really filling.

Or asolutely smash an entire block of cheddar with a box crackers and the rest of the loaf

If i am being completely honest , when I am actually LAZY it's and Gin & Tonic with cheese and crackers.

I make homemade falafels a lot. Really quick and easy to make. Usually do them with pitta/flat breads, lots of salad and some couscous.

Dips and raw veggies. Super quick. Sometimes with a pitta bread heated over the gas hob burner so it slightly chars, then cut into strips. The pitta is the best bit and saved until last.
If have hardboiled eggs, will make vegetarian club sandwich on 3 bits of M&S super seeded bread, toasted. Little bit of grated cheese, packed with tomato and lettuce and a blob of mayo. It's incredibly filling and very tasty.
Stir in red pesto, pasta and broccoli. All done in about 13 mins.
Cauliflower cheese grill in a bun and salad. Done in 20 mins, but nothing really beats baked beans on toast. Comfort food at it's finest!

Air fryer chicken breast (with lemon, herbs, salt and olive oil) and salad. Sometimes with roasted peppers (from a jar if I'm feeling lazy) or sun dried tomatoes.

What I tend to eat when I am home alone. Love it.

Tinned mackerel in tom sauce on spaghetti with cheese, little bit of basil sprinkled on top. Sometimes slice a bit of garlic to go in the sauce.

Literally zero effort, but oily fish . . and comfort food. . .

Stir fry veg mix, fry add a pack of microwave rice (or I use a rice cooker and freeze extra portions) meanwhile pan fry salmon fillets and fresh ginger, add soy sauce, equal amount of water, honey or sugar, a chopped spring onion, a chilli and sesame seeds, cook 1-2 minutes.

Couple of home made burgers (literally just mince & salt), some kind of cheese, gherkins, mustard and a large knob of butter.

The combination of those ingredients together is phenomenal.
