To ask what your favourite lazy, but still kind of health dinner is?

I need inspiration.

mine is a cheeseburger salad. Shredded lettuce, pickled red onions (homemade so they’re exactly how I like them), a bit of cheddar cheese, sauces of your choice and some fried beef mince. If I’m feeling gluttonous I’ll add some bacon too. It feels so decadent but takes ten minutes to make!

Jacket potato with baked beans and a couple of chipolata sausages I did in the air fryer

Top The jacket potato with a bit of cheese and on the side baked beans and a generous helping of last night chunky coleslaw which I make every week (thinly sliced white cabbage, a couple of chopped up fine spring onions, some chopped up fine red onion, and a generous helping of grated carrot mixed with your favourite salad dressing).

The other one that I like to do is once a week I roast a massive amount of peppers, courgettes baby potatoes, sliced carrots, sweet potato you could add tomato et cetera. I then air fry some salmon steak in foil to go with it.

I freeze the leftover Mediterranean veg and have it a bit later in the week having defrosted it throughout the day and then I stirfry it and add to other things like chicken or if I’m lazy, some more salmon.

I live alone

Another one I find quite good is I’ll use a family fajita pack. Stirfry frozen peppers, some onions, few mushrooms et cetera then add sliced chicken and cook through before adding the fajita seasoning.

I’ll have that probably one night but the rest I put into a tub and the spare wraps into a bag then for lunch I’ll top one of the wraps with a bit of the meat mixture. Ping it in the microwave drizzle over the salsa and have that for lunch. Sometimes I might add some shredded lettuce if I’ve got any over from something else.

One of my favourite breakfasts is baked beans on toast but

The toast is buttered and cut up into small squares like my mum did when I was a kid
And I put it in a bowl, not on a plate with the beans mixed in
Then I like a fried egg on top

No, it's not you! Loads of these meals aren't lazy at all, they're proper cooking albeit relatively simple. People just aren't admitting when they stand over the sink eating a rotisserie chicken out of the bag with their hands.

For me it’d be digestives with sliced apple and cheese. ( I’m not mentioning the lazy dinner which is Hagen Daaz and popcorn. )

A one tray roast. Tonight, for instance it's red onion, carrot, red pepper, mushroom and asparagus, baby new potatoes and sausages. I prick the potatoes and ding them for a few mins to get them started, prep veg, put them all in a tray, sausages on top, olive oil and season, 30 mins in the over. Easy peasy, yummy and healthy ish.

Thanks for this, I used to similar meals to this quite often but I’d forgotten? I think sometimes I’d break an egg onto the baking tray if there was a bit of oil on it. I’ll have to revisit this 😊

Aldi do a pack of two garlic marinated cooked salmon fillets that are delicious. I'll have one split between one or two slices of slices of sourdough toast with mashed avocado. I don't bother to heat the salmon, just remove the skin (my preference). The whole meal takes however long it is for the sourdough to submit to toasting.

Or, merchant gourmet Mexican grains pouch. Heat in microwave for a couple of minutes, bit of grated cheese, half a mashed avocado. Very quick, filling, and impressively high in fibre and protein.

Or, a yoghurt bowl. Decent greek yoghurt (the M&S 0% fat one tastes rich and luxurious without being high in calories, plus has a good amount of protein) with whatever fresh/frozen fruit is available, a few walnuts, some chia and/or flax, and some manuka honey. I can eat that for breakfast, lunch, or dinner.

pile of instant mash, beans round the edge and an egg (fried or poached) popped on the top. splidge some worcester sauce or soy sauce liberally on the top and bingo!
heat up some frozen peas if i’m feeling fancy.

Noodles with fridge veg. I soak the noodles, then add them into a pan of veg. I always have onions, garlic, ginger and chilli. I add whatever other veg is in the fridge.

Traybake. Veg from the fridge - good ones are sweet potatoes, potatoes peppers, onions, broccoli, courgette, etc. With a salmon fillet or chicken thigh. Add some sort of flavourings, beit spices to toss in before cooking or a sauce from the fridge. Fresh herbs if around at the end.

Grab a foil sheet. Chuck on fillet of whatever fish you like. Some veg like mangetout and baby corn next to it. Top with garlic, ginger, chilli, lime, seasame oil and soy sauce. Close parcel and into high oven for 12 min. Takes less than 3 minutes to put together. Serve with some fresh egg noodles that have been stir fryed with some hoisin sauce. The whole thing takes 16 minutes from fridge to table

Chicken skewers from Iceland (loads of varieties) in the air fryer with microwave rice pouch and frozen veg or salad. Takes minutes and is really filling but low fat.

I’m having these tonight but I make “risotto” using cauliflower rice and throw in whatever veg i have, even if it’s just frozen peas and sweetcorn

Lean turkey mince fried up with garlic, gochujang, dark soy and some honey. Add frozen peas and green beans. Serve with basmati rice - it takes as long as the rice does.
