To ask what your favourite lazy, but still kind of health dinner is?

I need inspiration.

mine is a cheeseburger salad. Shredded lettuce, pickled red onions (homemade so they’re exactly how I like them), a bit of cheddar cheese, sauces of your choice and some fried beef mince. If I’m feeling gluttonous I’ll add some bacon too. It feels so decadent but takes ten minutes to make!

I bought an air fryer a month ago and it has changed my life! Got the Ninja Crispi, the one that comes with two glass bowls and the power pod that does the actual cooking. I love it, so quick and I can get my tea from cook to plate to my hungry belly in around 20 minutes. My quick healthy one is salmon, asparagus, cherry tomatoes and a few mini roasties all bunged in the air fryer . I pre heat it for 5 mins and do a bit of clearing up in the kitchen while this is going on then bung in the frozen mini roasties for about 5 mins, then add the salmon for another 5 mins, then pop in the veg for another 5 mins, so a total of 15 mins. Because it has a glass bowl I can see things cooking. Sometimes I add some cole slaw and/or mixed salad if there is some in the fridge

I hardly ever make an omelette, yet everytime I do I think how delicious and easy it is and wonder why I don't do it more often.

Instant Noodles.

My favourite are the nissim demae spicy ramen noodles, jazzed up with ribbon carrots, pak Choi or spinach, shredded chicken and a fried egg on top. With lots of crispy chilli oil.

Pasta with decent jarred pesto sauce and a salad of whatever is left in the fridge. DD and I are having it tonight while we watch an episode of the BBC Pride and Prejudice.

Salmon baked in foil with butter and lemon, or teriyaki sauce. With home made egg fried rice with extra veg like spring onions, mushrooms, peas or shredded sugar snaps. You do have to remember to cook and cool the rice earlier in the day or the day before.

Air fried sardines (literally open a can of sardines in oil, drain a bit of oil off, put in air fryer for 10mins or so until skin goes crispy) on a bagged salad with some toasted pitta bread.

Or kimchi noodles. Straight to work noodles stir fried with a load of kimchi which works as a sauce too. I can make this into a full meal by adding stir fry veg, tofu and a fried egg on top but just the noodles and kimchi is pretty tasty too.

I love the precooked sweet chilli salmon fillets, a pack of Ainsley Harriott couscous and a bag of steamfresh veg. Quick, reasonably healthy and really nice.

My favourite is smashed avocado on toast, but i mix it with cherry tomatoes, spring onions, peppers ( all really finely chopped), pomegranate and some grated cheese ( salt, pepper and lemon juice too). I pile it all on top and its just delicious

A bag of Merchant Gourmet frozen Korean style vegetables and a bag of frozen king prawns. Whack them both into a frying pan, put a lid on and ignore for 10 mins. Done.

Creamy garlic mushrooms on toast.

I freeze portions of chopped garlic and cubes of double cream.

Butter toast generously and Sprinkle with pre-grated parmesan

This just made salivate!!

Sweet chilli chicken noodle salad.

Chicken breasts in the air fryer, chop them up, Chop up peppers, cucumber, spring onion and coriander, grate a carrot, chuck in some sweetcorn, chop up some tinned pineapple rings, keep the juice.

Add microwave bag of rice noodles.

Sauce is soy sauce, sweet chilli, some of the pineapple juice, juice of a lime.

Good olive oil and a decent splash of balsamic or other vinegar you like, some juice from my pickle jars and then chopped up kalamata olives, capers, grated italian cheese, jarred roast peppers, tinned fish is I have it or sundried toms, lots of pepper and a baguette 😋

I bake bread semi-regularly, but I assure you it's completely compatible with a FT job.

As a non-trad wife and no domestic goddess, I agree!

Knead it with a dough hook on a free standing cake mixer and do the first prove overnight in the fridge. If I didn't have these options, no way would I ever bake bread from scratch, but I do it fairly regularly now

When you say sauces of your choice what are you putting on? Like a mayo/ ketchup burger sauce sort of a thing?

Mine is this: Chorizo, Leek and Tomato Pasta.

Pasta on. Fry the chorizo, possibly in a bit of garlic, and in the chopped leeks and soften. Once leeks are slightly softened add in cherry tomatoes. At this point if you have sundried tomatoes they would also be nice. Grate in a bit of lemon zest. Couple of tablespoon of half fat creme fraiche to make the sauce. Add some pasta water to loosen the sauce and combine.

Not that I am saving chorizo is super virtuous, but it's very nice and lots of veg in there.

Salad with anything I have hanging around with it, today I had as whole head of lettuce, pickled beetroot (from a jar), pine nuts, red pepper, spring onion, raw tofu crumbled with a dressing of yogurt and mustard, topped with bagel seasoning.
