I need inspiration.

mine is a cheeseburger salad. Shredded lettuce, pickled red onions (homemade so they’re exactly how I like them), a bit of cheddar cheese, sauces of your choice and some fried beef mince. If I’m feeling gluttonous I’ll add some bacon too. It feels so decadent but takes ten minutes to make!

Creamy garlic mushrooms on toast.

I freeze portions of chopped garlic and cubes of double cream.

Butter toast generously and Sprinkle with pre-grated parmesan

Posh breaded chicken or fish goujons. In a wrap with shredded cabbage, avocado and lack bean salad with coriander and lime, salsa (M&S in a jar is the best) very quick and tasty.

I love smashed avocado on sourdough with plenty of lime, garlic and chilli, chopped up tomatoes and a poached egg on top. Even better with a few rashers of streaky bacon on the side.

I like to mix half a bag of pre shredded carrot, half a pack of pre shredded beetroot, and half a pot of premade coleslaw, and have it with a crumpet covered in melty cheese from the air fryer. It's multicoloured and full of veg and takes less than a minute.

I like a stir fry - you can buy deals in most supermarkets, I often get protein noodles, then top up the stir fry veg with other veg we have in, I like mine with tofu, hubby often has prawns.
Tasty, filling, cheap and quick to make.

I've never been able to make my stir frys actually taste like anything, even with sauce or adding lots of garlic. I've given up tbh

Sesame oil is the secret ingredient to stir frys and fried rice. It gives it the right flavour base.

Add in a big handful of frozen peas just before you take the pasta off the heat and it's got your veg!

Probs my feta cheese pasta.

Block of feta in a roasting tray, a load of cherry tomatoes chucked round it, some chopped basil and olive oil.

Bake in the oven for about 40 minutes cook some pasta and mix altogether.

Salmon fillets, baby tomatoes, celery , garlic, lemon juice, olive oil and salt all thrown in together, wrapped in foil and chucked in the oven for 25 minutes. With rice on the side.

Massive Greek salad ( cucumber, tomatoes, red onion, feta, olives, lemon juice, olive oil and salt) and chipolatas or grilled chicken. Some flat bread too.

Sausage and beans casserole: butter beans, onions, garlic, tinned tomatoes with some sausages or chorizo . In a saucepan, simmer until all cooked. With some crusty bread.

I often make what I call tiktok orzo. Fry some (frozen prechopped) onion, throw in orzo and water, let it cook then stir in half a boursin (and some peas if I want to be healthy) and Bob's your uncle.

A one tray roast. Tonight, for instance it's red onion, carrot, red pepper, mushroom and asparagus, baby new potatoes and sausages. I prick the potatoes and ding them for a few mins to get them started, prep veg, put them all in a tray, sausages on top, olive oil and season, 30 mins in the over. Easy peasy, yummy and healthy ish.

Grilled marinated salmon, white rice and broccoli, lots of soy sauce.

Or wholemeal pasta with broccoli, chilli flakes and pesto.

Haven't made in a while but brown rice stir fried with sesame oil, egg, Swiss chard and tofu is delicious! Red pepper and mushroom if you want.
