AIBU to think my colleague is lying about having two dogs?

I work with a work colleague on a one to one basis however I think she’s lied to me about having 2 dogs (she does have 1) as well as to various other work colleagues.

No one likes being lied to and I imagine you must be totally consumed thinking about what else your work colleague that you work with might be deceitful about.

Yep, based on what you've said she's definitely lying. You need to start a teams chat with all your colleagues and set out your case against her in as much detail as possible. See if others can contribute any evidence in the firm of single dog vibes or similar and see if you bring a case to HR to have her investigated.
