Accidentally made a massive lasagne and feel panicky

As title, really.

I made a vegetable lasagne this afternoon and it’s turned out much bigger than intended, with an estimated weight of around two stone.

Albeit very nice, it is rather rich for my taste, using cream cheese in lieu of béchamel, not to mention the secret layer of fresh basil leaves. It’s only me to eat it and I don’t think I can face it for some time after one more serving tomorrow. Freezer is full. Neighbours all vegan.

The huge lasagne is cooling off in my now extinguished oven while tough decisions are made. Feeling a bit hot and panicky about it.

What do?

I did this once with a crustless quiche thingy and had to eat it for a week. I never made it again. Good Luck.

pull a couple of meals that can be out of the freezer and put those in the fridge dinners for the next couple of days portion and cling film todays lasagne and put those in the freezer saves you making any lasagne for a while

Defrost something or put it in the fridge to eat all week or invite people over to finish it tomorrow.

Can you cook some of the other stuff in your freezer, put that in your fridge to use over the next few days, and freeze the lasagna?

Make room in the freezer and freeze it in small portions.

If your freezer is full then eat some of the freezer stuff rather than making 2 stone lasagnes!

You might be able to get rid of some using the Olio app.

What about taking stuff out if the freezer for tomorrow, and tomorrow taking stuff out for the day after, and filling the gaps with portions of lasagne?

Honestly I’d love it if a neighbour offered me homemade lasagne, can you put a message on FB for local friends?

Portion it up, and squeeze one or two in the freezer, there must be SOME room?! Then the others will last a good few days in the fridge so you don’t have to have it tomorrow. What about taking some to work?

It sounds amazing. Freeze it and enjoy it at your leisure.

This may sound weird but honestly cottage cheese is amazing instead of white sauce in a veggie lasagne as long as you put cheddar on the very top layer.

I am a massive lasagne fan and this piece of information changed my life for the better.

Pop some in the freezer. Pop a portion in the fridge for a few days time. If you really can’t face it take it into work? - anything left in our staff room gets demolished. Lasagne would last less than an hour.

Cut it up into portions so it is easier to play freezer Tetris.

take something out of the freezer to thaw to eat tomorrow and the next day.

Take things out of your freezer to eat tomorrow and the day after. Use the space you’ve freed up to freeze some of your lasagne. Leave at least one portion of lasagne out for the day after the day after tomorrow.
Or invite people over to eat lasagne.
Or reorganise your freezer. Space can almost always be found by repacking.

I want to know where you live where ALL your neighbours are vegan??

Take some bits out of the freezer, portion up separately and you'll find some space I bet. Rest can go in the fridge; it's cooked veg so it'll be fine for a few days.

Food banks wouldn't take this. They can't just hand out random home cooked foods of unknown ingredients and sell by dates.

I would give it to someone who's recently had a baby
