Accidentally made a massive lasagne and feel panicky

As title, really.

I made a vegetable lasagne this afternoon and it’s turned out much bigger than intended, with an estimated weight of around two stone.

Albeit very nice, it is rather rich for my taste, using cream cheese in lieu of béchamel, not to mention the secret layer of fresh basil leaves. It’s only me to eat it and I don’t think I can face it for some time after one more serving tomorrow. Freezer is full. Neighbours all vegan.

The huge lasagne is cooling off in my now extinguished oven while tough decisions are made. Feeling a bit hot and panicky about it.

What do?

The thought delights me. Tomorrow I'm going to be making my very own 2st veggie lasagne. I would ask if OP is nearby but no point, her neighbours all being vegan suggests she doesn't live round our way.

Impromptu dinner party? Move some other stuff out the freezer?

Make a lasandwich at least.

@Wilop I've just made an old Scottish Slimmers aubergine curry recipe - intended for one person one meal, all calorie counted. I have been eating it for four days, I couldn't believe the size of it. No wonder Scottish Slimmers folded.

You know, the schoolnight ones where everyone SAYS they will drink fizzy water and somehow end up pissed as farts, and then the lasagne will be gone, gone forever and everyone will remember you for years. With gratitude since they didn't have to cook anything themselves on a Tuesday night.

Not sure if anyone has suggested this (I haven't RTT) - there is a Facebook group called 'Free My Meal', where you can offer a meal or portions of it, to those who might need it. You can ask recipients to bring their own dish to collect it in.

Food banks wouldn't take this. They can't just hand out random home cooked foods of unknown ingredients and sell by dates.

Agreed. I don't think they take cooked food in any case. I meant more like a kitchen that puts together meals for homeless people.

You poor fucker. All your neighbours are vegan?

Nibble the end off and fling the rest into the undergrowth. Best get rid of it if it’s presence on the draining board is panicking you…

Invite some friends round for dinner on Wednesday - gives them time to make dessert/organise a salad so the meal is less rich. Get something out of the freezer to eat tomorrow. After Wednesday you'll have some space in the freezer and a lot less lasagne. Maybe your dinner guests will take a portion home too, so they'll still owe you a meal.

You can't invite friends around for dinner and serve up two day old lasagne 😂😂😂😭

We really have.

I've recently started calorie counting and weighing all of my ingredients and I've been in disbelief about just how big my usual portions were, compared to what is reccomended.

In my experience freezer space expands to fit overcatering. I bet you could squeeze lots of individual portions in there if you tried.

That's what I do, it can make dinner interesting, just remove a random plastic box or bag! November's shepherd's pie tonight.
What I don't understand is how one can accidently make such a large lasagne, surely the quantity of ingredients was a clue.

Freeze it in single portions, then post it through random people’s door. You’ll be known locally as the frozen lasagne fairy. Just make sure you’ve got a good outfit ready before you head out.

I usually have a bag of ice that one of my visitors insists on buying and uses maybe four cubes from it. They absorb smell quickly so can quickly be dumped. Makes a nice bit of space.
If there's a tub of ice-cream with not much in move it into either a smaller container or a freezer bag, again, space. When I buy things in boxes I often remove the contents into freezer bags to save space.
