Accidentally made a massive lasagne and feel panicky

As title, really.

I made a vegetable lasagne this afternoon and it’s turned out much bigger than intended, with an estimated weight of around two stone.

Albeit very nice, it is rather rich for my taste, using cream cheese in lieu of béchamel, not to mention the secret layer of fresh basil leaves. It’s only me to eat it and I don’t think I can face it for some time after one more serving tomorrow. Freezer is full. Neighbours all vegan.

The huge lasagne is cooling off in my now extinguished oven while tough decisions are made. Feeling a bit hot and panicky about it.

What do?

Your lasagne sounds very nice. Don't panic about it.

I second the suggestion of portioning it up and finding little pockets of space in the freezer. Also you might feel like eating it for a few days once you are hungry again. I would try to portion it up as soon as you can so it does not seem so daunting. Then stow a few portions in your fridge to eat over the next few days and as many as you can fit in the freezer.

Could you invite some people over to eat it with you? If none of that works out and you need to throw some of it away, don't feel sad or worried about it. It's not the end of the world.

One further thought - you say it is very rich - if you serve with some undressed spinach or rocket or watercress this will really offset the richness of the. dish.

Best of luck. This is not a disaster.

I mean, it's not Dorothy Parker levels of wit, I grant you (sorry OP) but I can't imagine a world in which OP is genuinely blowing into a paper bag due to inadvertently constructing a lasagne the size of a toddler.

This happens to me all the time, completely get the proportions wrong and end up with some massive pan of this or that.

I wont throw food away so it gets frozen, the freezer is full of unidentifiable little pots.

Theres 17 years of ready meals there for you OP, pop them in the freezer and enjoy

Invite some friends round for dinner on Wednesday - gives them time to make dessert/organise a salad so the meal is less rich. Get something out of the freezer to eat tomorrow. After Wednesday you'll have some space in the freezer and a lot less lasagne. Maybe your dinner guests will take a portion home too, so they'll still owe you a meal.

hopefully you mean two pounds (at most)? Two stone you must have used enough ingredients for a small army and have some huge dishes.

How do you accidentally make something so big? You’d notice as you were making it.

But at a certain point you know you’ve chopped too much veg and you’re committed. There’s nothing to do but see it through to the bitter end.

I can sympathise with OP. I always end up cooking more than I thought.

This may sound weird but honestly cottage cheese is amazing instead of white sauce in a veggie lasagne as long as you put cheddar on the very top layer.

I am a massive lasagne fan and this piece of information changed my life for the better.

I used to make massive lasagnas like this and then realise it was only me to eat it. I never panicked but made my way stoically through the massive thing

But my topping was always cottage cheese, mixed with an egg and cheddar and mozzarella, it puffed up and was really cheesy.
