Accidentally made a massive lasagne and feel panicky

As title, really.

I made a vegetable lasagne this afternoon and it’s turned out much bigger than intended, with an estimated weight of around two stone.

Albeit very nice, it is rather rich for my taste, using cream cheese in lieu of béchamel, not to mention the secret layer of fresh basil leaves. It’s only me to eat it and I don’t think I can face it for some time after one more serving tomorrow. Freezer is full. Neighbours all vegan.

The huge lasagne is cooling off in my now extinguished oven while tough decisions are made. Feeling a bit hot and panicky about it.

What do?

In addition to suggestions to take other stuff out of the freezer, & splitting said lasagne into smaller dishes to put in freezer, the other thing I would consider doing before freezing the portions (if you can) is: try & get rid of the cream cheese & either replace now with béchamel (or if can't as don't have any still) just try & bag up the 'nice' layers in a number of separate mini-bags to re make -up a 'whole one' (but smaller portioned dish) later? And add béchamel when the appropriately portioned layers have been defrosted. (so a number of individual-portion sized lasagne-layer food)

I’m still trying to work out why you’d use cream cheese instead if bechamel, no wonder it’s a bit rich, like a main and cheesecake dessert all in one mouthful.

As many say, take two meals out the freezer and replace with the left over lasagne split into individual portions.

Why are you panicking? Do you normally panic over such things? Just put it in the freezer and just eat it through the week or give it away to the homeless.

Go to the next street and knock on a door. Ask for access to the street WhatsApp. Locate some non vegans. If that fails, try the street after. Eventually you will reach a street where some non vegans live.

Chuck a tea towel over it, surround it with garlic bulbs and a few crucifixes. With any luck it’ll have vanished by morning.

There's no such thing as "no room in the freezer" There's always room if you have the right mindset

Too true: I squeezed a whole leg of lamb, 2 large homemade sourdough loaves and a tub of ice cream in my rammed freezer the other day.

This. Cut the lasagna into single portions and freeze it like that. The portions are small enough to tuck into little nooks and crannies. I make a BIG lasagna every Christmas, and do that with the leftovers. Works a charm.
