Accidentally made a massive lasagne and feel panicky

As title, really.

I made a vegetable lasagne this afternoon and it’s turned out much bigger than intended, with an estimated weight of around two stone.

Albeit very nice, it is rather rich for my taste, using cream cheese in lieu of béchamel, not to mention the secret layer of fresh basil leaves. It’s only me to eat it and I don’t think I can face it for some time after one more serving tomorrow. Freezer is full. Neighbours all vegan.

The huge lasagne is cooling off in my now extinguished oven while tough decisions are made. Feeling a bit hot and panicky about it.

What do?

In my experience freezer space expands to fit overcatering. I bet you could squeeze lots of individual portions in there if you tried.

When I once did something similar I portioned it up and gave several portions to my elderly sister in law, a few to her friends, a couple to an elderly (90's) friend of my husband and the rest went into the freezer.

The only long term effect of this was that, during covid, I continued to do exactly the same thing and deliver the same meal to the same people. They really appreciated it...... as I have been told so, so many times.

Cut into small portions and ram into freezer, would be my approach.

If it turned out nice id be happy to eat a bit with salad every day for a week or so tonget rid of 7 portions. Id probably swap it up between lunch and dinner.

pull a couple of meals that can be out of the freezer and put those in the fridge dinners for the next couple of days portion and cling film todays lasagne and put those in the freezer saves you making any lasagne for a while

I made a similar sized veggie lasagne yesterday. I was looking forward to the leftovers as there was enough for a family of 4 x 2.

There were no leftovers. I have a 16 year old son. Get yourself one of those and job done.

Two stone in weight? You 'accidentally' made a lasagne as heavy as a toddler for you to eat by yourself and have an oven/dish big enough to take a 28lb lasagne? A lasagne as heavy as about 14 bags of flour. Is this a joke post?

It's amazing what you can often shove into the freezer with sone effort especially if you don't worry about the shape when it comes out again

It must be, you can't accidentally over make a lasagne and a very odd reaction if somehow you weren't aware of how many ingredients you were using 😁
