@FrankiesKnuckle

Pork schnitzel with sweet potato wedges and corn on the cob. I buy a tenderloin and cut into 1cm ish rounds then pummel the fuck out of it. Fresh or Panko breadcrumbs mixed with garlic powder, smoked paprika and S&P. My pork hating child snaffles it up.

Another firm favourite is nigellas turkey meatballs. For the Tom sauce I add 2 grated carrots instead of sugar, and chicken stock instead of plain water, low and slow for a good couple of hours then blitz smooth. Really tasty and very easy.

@FrankiesKnuckle I'm veggie but think dh and dc would like your pork dish. Probably a stupid question, but do you dip the pork in egg before the crumbs? Do you need flour as well? Is it fried? Thanks

I had two hash browns I whacked in the oven. I had a jacket potato at work and when I got home wasn’t hungry at all. I thought I’d better eat something. Don’t know what’s happened to my appetite. I don’t eat breakfast and have lunch at work at 1pm.

FrankiesKnuckle · 20/09/2021 22:50

Yes to the egg dip, I loosen it with milk too, no flour. For extra crispy ones a double egg/breadcrumb dip.

FrankiesKnuckle · 20/09/2021 22:51

Oh and yes, shallow fried.

Cuddlyrottweiler · 20/09/2021 22:53

We get gusto because I'm crap at thinking up food and just got so sick of it. Today we had marmite and peanut butter pork udon noodles. It was lovely!

nokidshere · 20/09/2021 22:54

I made sausage pasta. Quick, cheap, easy. But I hate it so I had a mushroom omelette

Brilliant! Thanks so much Smile

Boringly had leftover chicken from roast yesterday with a jacket potato and salad.

Tomorrow having Joe Wick’s chicken filo pie and wednesday having chilli (or lasagne - something with mince beef anyway).

StoopitAutocarrot · 20/09/2021 22:57

A what’s in the cupboard meal tonight. Linguine with a sauce made from jarred artichokes, mushrooms with chilli, lime juice, pine nuts and Parmesan. Garnished with pea shoots!

I've ordered that for two weeks time!

Was it nice. There are marmite haters in this house but to be honest i thought "fuck them" can you taste the marmite.

DocAutumn · 20/09/2021 23:23

Tonight we had sausages, baby boiled potatoes and brocoli. It was delicious.

Nothing as interesting as everybody else aparently🙂. Family is having bbq'd burgers we made and froze a few days ago, probably they'll just have a salad with it unless one of them is inspired to make veggies. I am getting over a here flare up and having a plain dish, cubed chicken breast and rice baked together in the oven with mixed veggies on the side.

Hydrate · 20/09/2021 23:58

*gerd flare up

Chicken tikka wraps.

HahaAreyouSerious · 21/09/2021 00:43

Fish fingers chips and spaghetti hoops

I wouldn't fret, most in the thread had something similar in their not made up "lar dee dar" life.

Yesterday -I had a 15" oatcake (regional specialty) with bacon, sausage, mushrooms, tinned tomatoes, baked beans, cheese and brown sauce.

Today - Simple salad with sausage rolls, cheese & onion rolls, chicken and horseradish Mayo.

Tomorrow - takeaway black pepper beef with egg fried rice.

Keeping things simple with 42 year old DP being in the ICU.

BookFiend4Life · 21/09/2021 01:53

Tonight... totally random because we're moving: Lentil Dahl, deli turkey, toast with cream cheese.
Normally more organized:
-Whole wheat spaghetti with loads of roasted veggies, evoo, and parm + grilled bison steaks
-Chicken sausages with cheesy rice and roasted green beans
-Black pepper tofu and eggplant (smitten kitchen) add ground pork for company
-Homemade potstickers with roasted broccoli
-Shrimp banh mi (Melissa clark) with sweet potato fries
-baked potatoes topped with broccoli cheddar soup
Just some fun ideas!

Bloodybridget · 21/09/2021 02:41

Sunday night I made kedgeree, which we had with green beans. Last night a bought quiche Lorraine, a shared jacket potato, and roast cauliflower.

Hydrate · 21/09/2021 11:06

Sorry to hear your dp is in ICU, good luck. Daffodil

RaoulDufysCat · 21/09/2021 12:30

Lamb steaks, baked gnocchi and salad.

SoMuchToBits · 29/09/2021 22:34

@SkiingIsHeaven sorry I've only just seen your question to me! The recipe for Spetzofai (and most of the other Greek recipes I do) is from a website called My Greek Dish.

AudTheDeepMinded · 29/09/2021 22:37

Veg stir fry with noodles/rice. It was supposed to have quorn with it but due to a communication issue with dh there wasn't any. Brocolli, carrot, baby corn and peppers. And a jar of sauce.

I whipped up an angel delight to make up for the poor show!

Bonheurdupasse · 29/09/2021 22:40

Risotto with bacon, mushrooms and goats cheese
