Fried swordfish steaks, baked pumpkin wedges, fried rice with veg and onions and spices.
Sounds amazing like something off master chef lol. I haven’t eaten swordfish for years but I will now .

@avamiah it was really nice if not quite Masterchef. Swordfish steaks currently v reasonably priced in Sainsbury's! I marinated them in garlic, lemon and black pepper first.

This week we'll be having:
Mixed bean chilli
Nadiya's chicken schwarma, flatbreads and coleslaw (I don't make her raw broccoli version, just a normal one)
Chinese pork steaks with stir fry veg
Soup, and cheese toasties
Something Japanesey with tuna steaks - inspiration will come to me!

We had slow roast pork shoulder, with crackling etc for our roast yesterday - so today is shredded pork noodles with 5 spice and cabbage.

thurs-sausage mash and veg
fri-burgers or curry

Yesterday we went out for lunch, I had gammon with rosemary fries, egg and peas then vanilla cheesecake with clotted cream ice cream
Rest of this week:

  1. Nando’s style bbq chicken with roast new potatoes, corn on the cob and cheese coleslaw
  2. Spag bol
  3. Peppered roast pork joint with stuffing, mash, Yorkshire pudding, peas and carrots
  4. Easy freezer tea, probably pizza or chicken nuggets or similar
  5. Curry

We have 'breakfast for dinner' every Monday as it is the DCs favourite hot meal at school day.

It varies, but tonight is baked beans and poached eggs on toast.

Lately we have had;

prawn fried rice
beef and carrot stew with mash
cottage pie with mash
chicken cooked with cream, parmesan and sundried tomatoes (a hit with everyone)

Leek and bacon pasta - basically leeks cooked butter with lots of black pepper and then add chopped bacon and ready made cheese sauce and pasta 😋

Roast breast of lamb, roast potatoes gravy Yorkshire puds ( frozen) cabbage and broccoli . Easy peasy dinner , the only work is peeling the potatoes

We unexpectedly ate out yesterday so tonight we're having what we should have had then:

Fillet steak
Steamed new potatoes (for me & dh)
Skin on oven fries (for dd)
Griddled asparagus, courgette & red pepper
Steamed broccoli
Peppercorn sauce

Can't wait!!

Salmon fillet cooked in the oven with a bit of olive oil and cherry tomatoes. Red quinoa on the side with a helping of green beans sautéed in garlic butter. It was delicious.

Thai red curry. To be honest the me ‘making’ it was minimal as I used a paste but needed a quick fix for a small amount of chicken (we usually cook for two days but apparently no one likes it that much so this pack of chicken is too small for anything else I might cook).

Tonight I'm going to do a traybake because I'm feeling lazy - chicken thighs, chorizo, auberinge, tomatoes (from my garden, I am smug) and red onion. I do it with rice if we're really hungry, and sometimes serve with whipped feta on top which is divine.

Other regular favourites are:

salmon fillets with coconut rice

steak and cauliflower mash

fresh rigatoni with Bolognese sauce

tuna steak with new potatoes, green beans and salad leaves with way too much dressing

aubergine parmigiana

roasted aubergines with tahini dressing and pomegranate seeds

lamb koftes with pita bread (I don't make the pitta bread, I'm not that good) but I do make hummus and tzatsiki (sp?) because it's so much nicer than shop bought.

Slow cooked lamb shanks with mash

Sausages and mash

Fajitas

Lamb steaks marinated in mint, lime and garlic with roast new potatoes and whatever green vegetables I have in the fridge.
