Mot hungry here as we have a big Sunday brunch, so I picked some large apples off our tree, stuffed them with dried fruit, sugar and butter and baked them. Served with cream 😋

Tonight we had rump steak with peppercorn sauce, onion rings, mushrooms and peas. Very rarely have steak so it felt like a real treat….. though neither of the kids liked it.

Frequent teas in our house:
Stir fries
Pasta dish with salad
Marinaded chicken with new potatoes and veg
Lasagne
Fajitas
Old El Paso rice meal kit - I love that!
Jacket spuds with various toppings.
Pizza
Homemade burgers
Soup and fresh crusty bread.

This week we've had
chicken supreme with wilted cabbage and mashed potato
middle eastern Mac N Cheese (ottolenghi in this weeks Guardian)
butternut & black bean burgers
pork belly and radicchio/hazlenut salad
sweetcorn soup with ndjua crumbles
Ethiopian lentils

Bought a chicken but wanted to do something different for the normal Sunday roast so googled and found this recipe.... It was delicious. Even my 8 year old gave it 9/10!

This was yummy, although Hake was a tenner ....

Looks great. I love fresh fish but I’ve noticed it’s really gone up in price unless you buy it on the day when it expires and then it’s next to nothing but I never fancy doing that with fish as I once had a off oyster and was bedridden for days.😦

Dinner this evening was Spetzofai - Greek dish involving sausages, red onion, peppers, garlic, tomatoes, red wine etc. Lovely! Will be eating the rest of it tomorrow evening after work.
That sounds delicious. Do you have a good recipe please?

Ooh. I did a gorgeous pasta with chorizo and king prawns. Onions, mushrooms, tinned toms, Italian herbs and shitloads of garlic. Grated cheese on top. Dead srummy and enough to just microwave tomorrow too. Win win!!

We have chilli tonight.

Last week I did a really nice egg fried special rice with diced pancetta, prawns, spring onion, baby corn with a little soy sauce dash over once I’d fried in the rice and stirred in the egg. It was lovely and will be one to repeat!

Pork schnitzel with sweet potato wedges and corn on the cob.
I buy a tenderloin and cut into 1cm ish rounds then pummel the fuck out of it. Fresh or Panko breadcrumbs mixed with garlic powder, smoked paprika and S&P.
My pork hating child snaffles it up.

Another firm favourite is nigellas turkey meatballs. For the Tom sauce I add 2 grated carrots instead of sugar, and chicken stock instead of plain water, low and slow for a good couple of hours then blitz smooth. Really tasty and very easy.

I've had tortellini AGAIN tonight. Had it on Thursday and Friday, these dishes are being full on copied

Even DD asked me why I only eat one meal 🙄 cos I have no inspo duh!

I ate leftover takeaway which isn't helpful but tomorrow I'm going to have tagliatelle with lemon, cabbage, and cream.
It's better than it sounds.

Roast chicken stuffed with feta, tomatoes and bread, and orzo baked in the pan with the chicken. Sautéed green peppers on the side. It was amazing!!

We had crab linguine yesterday which was also delicious.

Yep! I had chicken nuggets with sweet potato fries and beans the other night Grin TBH I am pretty simple with meals, I live alone and batch cook a lot so Corned beef hash Beef stew Pasta bake Chicken with a creamy mushroom and garlic sauce topped with mashed potato and baked

Then stuff that isn't batch cooked
Omelettes
Jacket potato
Salads
Egg fried rice/stir fry/Thai salads
Heinz tomato soup and garlic bread Grin

I’d promised everyone a roast but the weather was awesome so I took my horse to the beach and didn’t get back till nearly dark.

I’m smelling horsey and knackered and drinking wine and everyone’s got the hump Grin

So basically I had wine for tea !

I had pork loin with balsamic vinegar and apples from a recipe I found yesterday. I added sliced beans to get more veg. It was bloody lovely and is definitely on my list to make again.

Something I made up!

Fry onions and spam in big frying pan. (Cubes)

Boil potatoes (cubes), savoy cabbage (shredded) and eggs

Add the boiled stuff to the frying pan.

Grate carrot in to the frying pan

Add Worcestershire sauce, chilli sauce and fry/stir in

It’s Sunday, so we had a Sunday roast same as every week! Today was roast beef, Yorkshire puddings, roast potatoes, green beans, carrots, broccoli, Savoy cabbage with bacon, and gravy. Then apple pie with cream because the apples are dropping off the tree.
