I'm running out of meal ideas and I am sick of the same things!

Yesterday DH took DC to visit PILs so I had a packet of crisps with some dip and an apple.

Tonight was leftover jacket potatoes, baked beans and cheese with a side of boiled carrots. I need to go to the shop.

Tomorrow will be oven cooked salmon with microwave new potatoes and green beans.

The next day will be roast chicken with potatoes and boiled veg.

The day after that will be leftover chicken with shop bought couscous and boiled veg. I don't make soup so the carcass will go in the bin, shock horror.

The day after that will be supermarket pizza with sweet potato wedges and sweetcorn.

Then, if I'm feeling inspired, I might make a chilli and serve it in various guises over the next four days.

I fucking hate cooking. But I grit my teeth and DC is duly served at least 5 fruit and veg a day.

The only thing worse than cooking for DC is cooking with them.

We don’t have regular meals per say, as everyone gets to choose a meal once a week and normally it’s something different.

Fri - homemade pizza and cajun chips (ds2)
Sat - meat feast (ribs, steak, gammon, SFC) with sides of hm wedges, corn and onion rings (ds1 choice)
Sunday dinner (Dh cooked)
Today - dh made chicken, chorizo rice dish...

I’ve eaten none of the above as have pneumonia and now on antibiotics.

Today - veggie burgers w salad/sweet potatoes. Friday night a French feast - we do feasts on a Friday when Lidl do their 'tastes of the world' as long as its Greek, Spanish, Italian or French. So we had mustard crisps, Coq au vin, tarte tatin, french cheese, cherries. Also french wine. And Ricard. And little french biscuits with coffee. Tomorrow we'll have black bean and aubergine chili with taco shells, guacamole and salsa. Wednesday we'll have dahl. Thursday prawn stirfry. Friday depends on Lidl!

Tonight was tomato’s stuffed with couscous, asparagus and garlic and herb potatoes.

Tomorrow is teriyaki tofu with roast veg and rice.

Tonight we had baked pesto gnocchi with chorizo and mushrooms, topped with cheese. Simple and yummy!

Tonight we had roast chicken with jollof and ... peas. It was supposed to be green beans but it turned out I had three bags of frozen peas instead of one of them being beans. Hmm

DH is out tomorrow so the DCs and I are having high tea for our evening meal. I bought lots of fun things.

Pasta with garlic butter melted through, hot dogs sliced and mixed through and halloumi snd baby plum tomatoes roasted on top. Was really nice for a thrown together meal.

We had chicken fajitas tonight (old el paso box), will be Roast beef tomorrow, then ribs on Wednesday... Dd19 is off to uni halls on Thursday so she got to choose the menu this week... (fitting round my work pattern).

Thai red curry with butternut squash, peppers, baby corn, and mangetout with jasmine rice. Lots of coriander and spring onions sprinkled over the top. Delicious.

Slow roast pork shoulder , roast potatoes and roasted Brussel sprouts

We are on holiday and were out on a 13 mile hill walk all day . I put the pork in the oven with a lid on when we left this morning . Potatoes were par boiled and sprouts prepped

Once home pork out , oven whacked up and potatoes/ sprouts put in the oven while we showered .

Delicious and lots of pork left for sandwiches tomorrow

Rest of the week will be pasta carbonara, steak with potato gratin and a meal out. Love walking holidays as calories in doesn't matter

Mine is lentil and quorn curry. I bought a pressure cooker a few weeks ago and it's game changing. You can bung in rice, veg, sauce/seasoning and 20 mins later you have a perfect meal!

really nice ideas! We had baked sweet potatoes with spiced vegetable ragout (onions, garlic, cumin, coriander, chilli flakes, courgettes, red peppers, cherry tomatoes, spinach, finely sliced runner beans) with slices of halloumi on top of the ragout and then put under the grill for 10 mins until brown. Then pear and raspberry cake made with pears that were about to go horrible but were caught just in time. Lovely monday night fruit & veg fest, very filling and satisfying.

A pack of those Old El Paso stand and stuff soft tacos (because they're easy for the DC to fill.) Veggie filling made with the spice mix, chopped pepper, salsa and mixed beans. Sour cream, spring onion, coriander and cheese for people to add their own toppings. Some salad on the side
It was quick and easy and surprisingly tasty!
