Sweet potato. Love it everywhere...mashed on top of shepherd's pie, roasted with Sunday dinner, in a curry, grated and made into a fritter thing, even in a brownie recipe. Smile

Mushrooms, asparagus, or artichoke hearts. All the fancy stuff. The veg I actually eat regularly is more like potato, carrots and cabbage: dull but cheap.

Broccoli. I just love it. Boiled for a couple of minutes until it's just tender with a sprinkling of salt. Perfect!

jerusalem Artichokes - esp in risotto
roasted cauliflower, and cauliflower cheese
aubergine

chargrilled artichokes
and just spotted spinach above - yes, spinach is definitely up there
and garlic

So hard to choose but I do love honey roast parsnips. And I had fresh runner beans from a friend’s garden once which were absolute heaven on a plate!

Leafy green things are my main love. Spinach, kale, cavolo nero, cabbage (Savoy especially), Brussels sprouts, and if broccoli counts here that too, especially if it's the sprouting one or romanesco.

Also love mushrooms, sweetcorn/corn on the cob and carrots.

@Flummingbird Have you tried courgette fritters? Grated courgette mixed with egg, flour and grated cheese. Yum!
