It's wet, miserable and cold today. So, I'm thinking of making a goulash tonight, I'm searching recipes now.

I love a soup or stew for dinner when it's cold, with fresh buttery bread!

Full English for tea last night with homemade cake for pudding

@ElizaDee, if you're trying lower carb meals and fancy lasagne, I can recommend using thin slices of courgette (or aubergine, if you prefer) in place of the pasta.

Something like this, maybe?

Last night, I used up some bits that had been in the freezer for a while, plus veg that needed using up and made a chicken and prawn stir fry.

I chopped up 1 red pepper, 1 green pepper, 2 carrots into thin strips and sliced 5 medium mushrooms.

I de-boned the leftover chicken from the day before, and defrosted a small pack of prawns and a packet of Singapore noodles.

I chucked it all in a wok and stir fried it, along with a sauce I made from some minced garlic and ginger, some soy sauce, some oyster sauce and a little bbq sauce to sweeten it (not sure on quantities or ratios as I kinda made it up as I went along and just kept tasting it until I was happy with it).

Ooooh loving this thread

We had/are having:
Leek and potato soup (though added some bendy carrots) with homemade bread
Quinoa and black bean salad (not v cold weather food but healthy and cheap)
Tonight is veggie sausages, roast potatoes, broccoli, sweet corn
Tomorrow (inspired by goulash chat!) mushroom stroganoff with pasta
Friday is veggie chilli, tortilla chips and rice
Saturday I think I’ll do a squash and lentil curry with some homemade flatbreads

Did Burnt Aubergine chilli last night - on BBC Good Food website, it was best veg version ever, read the reviews first as a few tweaks are recommended

Chicken in extra hot Nando's rub with paprika sweet potato wedges tonight and currently have a pan of Scouse on the hob for tomorrow's dinner (always better the next day). Fri will be a batch cooked pork/mustard/white wine/leek concoction from the freezer.

Had halloumi cheese and courgette 'burgers' that I made and which we then bbq'd. Served with salad and coriander pitta bread. Twas very nice.

It's super easy to make- I use this recipe & double the sauce:

DC also like the katsu sauce & rice with fish fingers - so while it takes a bit of effort to do the chicken version, that is compensated with a no effort at all katsu fish finger meal.

BTW I don;t sieve the sauce as the recipe says - I just blitz it all up so its smooth-ish.
