It's wet, miserable and cold today. So, I'm thinking of making a goulash tonight, I'm searching recipes now.

I love a soup or stew for dinner when it's cold, with fresh buttery bread!

Last night we had beef stew with pearl barley, it was bloody delicious even if I do say so myself!

Salmon, champ with asian salad on the side. Stew, cottage pie and spag bol also making an appearance on this weeks menu.
I love the sound of pear and rosemary chicken, also a few interesting chorizo dishes mentioned, yum.

So many things I'm dying to eat now - dumplings, spaghetti and meatballs, toad-in-the-hole! I made chilli con carne for supper yesterday, I'd seen a thread on MS about what spices to use so I went back to that and took advice, it was delicious, with jacket potatoes and rainbow chard. Tonight is courgette and orzo bake, tomorrow Jamie Oliver's "5 ingredients" fish curry, Thursday liver and bacon with mash, Friday pasta puttanesca.

Sweet potatoes chopped and roasted with lamb chop, spinach and Swiss chard. Loads of garlic, lots of rosemary, salt, black pepper.

Blackberry jam with apple sponge....

Layer of home made jam on the bottom of a baking dish. Then sliced apples from the tree, then a sponge cake batter over the top. Bake!

Copied you, OP. Had slow-cooker goulash with spring greens and fresh bread today. Went down a treat - DD especially loves a good, rich stew. She all but took the pattern off her plate.

Roast pork with whatever veg are knocking around in the fridge tomorrow.

Macaroni cheese on Thursday.

I love it when salad season is over!

Lentil cottage pie
Chickpea Tagine
Vegetable pasta bake
Mushroom bourginon

Er.......I think that’s as far as I have got with planning!

There's only a tiny bit of goulash left now so DH can eat that as soon as he gets in (I've got some for lunch) so I need inspiration for tonight's dinner.

I'm going to drop out all big carbs for a bit, bread, rice, pasta, potatoes, refined sugar etc as I think my blood sugars are too high so I don't know what we will have yet. I might do the lasagna with butternut squash instead of pasta.

Tonight we are having fish and chips. To make it more 'wholesome' and less lazy, chips will be made in the air fryer, and serving it with peas, broccoli and maybe some carrots.

Tomorrow is toasted sandwiches, chips and salad.

Friday is honey chicken noodles.

Me too, I thought about 25% of people are vegan or vegetarian these days, but maybe MN isn't very representative?

This is no good without recipes! I have fallen into a hole with cooking. No inspiration, and the same things all the time.

@IAmALazyArse ! you've just reminded me there's a prawn curry in the freezer. Sorted :)

I'm sure it'll be ok to cook it from frozen on the hob, the prawns were raw.

We'll have it with cauli or slim rice.

@Sconesat4 I've been meaning to try this, I saw it on here but haven't got around to it yet:

Chicken boursin - onions, mushrooms, bacon and chicken fried until cooked, melt in a pack of garlic and herb boursin and add double cream - with tagliatelle.

@ElizaDee freezer meals are my saviour😁
I have a cook week when I go and cook things in massive quantities, portion them and put them in a freezer for busy time ahead. And for when I CBA to cook...

This website says about 2 to 3 percent are vegan or vegetarian in the UK. www.vegsoc.org/info-hub/facts-and-figures/ I think the 25 percent figure is a worldwide statistic.
