We had asparagus and pea risotto last night, funnily enough. Haven't bothered to make risotto in ages as I find the stirring a bit time consuming (lazy mare Grin).

Must be the season for it!

I have a couple of pieces of salmon will probably just bake with some lemon and pesto. Have some steamed rice and pick three types of veg out of veg draw.

We had a nice dinner last night a Spanish style tortilla, cold salami and ham, salad and olives.

It's got to be something non-smelly (client meeting tomorrow) and involve chicken breast, so I'm hoping to be inspired by the end of the day. Perhaps chicken & asparagus pie.

My MIL looks after our toddler on a Tuesday and sends him up the road with dinner for us all in Tupperware (she's amazing), I've been told today is chilli con carne Grin

We're having one-pot fajitas.

Basically all the ingredients you'd put in fajitas (chicken, peppers, onions, mixed beans) cooked in one big pot together, served with rice and tortillas, cheese on top if you want.

Ds1 has swimming on a Tuesday afternoon so it’s always an easy tea. Sausage and chips tonight, but for the grown ups I have bought some “boozy bangers” from Aldi, cider and apple flavour I think.

I've got a new mincer attachment for the mixer so am a little bit mad on mincing everything. Today we're having pork, apple and honey burgers (home made, obviously, because I will never again buy another burger) with potato wedges and salad.

I suspect the DC are a bit sick of my mincer attachment now, and will be hiding it soon.

Homemade Meatballs here - Hairy Dieters version as it's a great way to get more veg in DC. Whenever DH makes them, he makes extra to put in the freezer, so we're having the ones from the freezer tonight.
