I'm on the ball today, made a potato hash which is ready to be heated once the girls are home from school. My stomachs already rumbling for it lol.

What's on your menu for today?

Vegan mushroom and butter bean burger with egg free noddles, red pepper and garlic

HarrySinger · 08/10/2018 21:24

lamb meatballs in a tamarind & tomato sauce with rice.

zebrarobot · 09/10/2018 01:03

@Nquartz i just use normal easy cook long grain rice. Cook it as you would, then fry it with some soy sauce and then throw in a beaten egg and mix around til the egg cooks. So yummy! We love putting spring onions in the rice as well but that might just be us.

Dreamscomingtrue · 09/10/2018 01:08

Spaghetti bolognese with lots of mushrooms. 😋 yummy

Dontfeellikeamillenial · 09/10/2018 01:42

Sticky chicken drumsticks, baked potatoes, garlic roasted cauliflower and red pepper here. Yum. Had leek, potato and carrot soup to start.

Xiaoxiong · 09/10/2018 07:29

Tonight is a Thomasina Miers recipe that was in the guardian last week - a traybake of chicken thighs, tomatoes, torn up bread and olives with a kind of basil slush splodged over when it comes out of the oven. Can't wait to try it. I'm bringing it to the ladies' potluck supper tonight and I hope they all like it!!

Xiaoxiong · 09/10/2018 07:29

@SleepyMcEdie what did you make with the chicken breasts in the end? Grin

Eliza9917 · 09/10/2018 09:17

I'm making chicken soup tonight, with loads of onion, garlic & thyme, DP is coming down with something so hopefully it will ward it off.

Faster · 09/10/2018 10:14

@Eliza9917 how do you make your soup?

fiftyandfat · 09/10/2018 10:29

Lemon and garlic chicken with rice and peas.
I made a lemon cake yesterday and have some half squeezed lemons left over. I use chicken thighs, olive oil, chuck it in the frying pan with lemon slices and garlic. Really easy.

mumof2sarah · 09/10/2018 10:54

I've just made a huge fry up for me and DH before he goes to work, then I'm going to make a nice shepherds pie with Vegs for tea. Love it when I'm on a home made tea making kick lol x

@Faster Really simply:

Cook the chicken if not already cooked (I normally make soup after a roast but sometimes buy chicken specifically, which I'll have to do today - there's none of yesterdays chicken left). Cook it for a long time on each side so you get a good frond. Remove from pan.
Fry onions & garlic.
Add rosemary & thyme and salt & pepper. Fry for a bit.
Add potatoes & carrots. Add the chicken back in. Stir into the other stuff so its all coated.
Add the water.
Add 1-2 chicken stock cubes/oxo.
Add dumplings (flour/water/salt rolled in to little balls. I normally add herbs too).
Let it cook, stirring occasionally. Add more herbs/s&p if required. I use loads of thyme.
Towards the end, add peas/sweetcorn if required.
Sometimes I add leeks when I add the onions.

Eliza9917 · 09/10/2018 11:05

I make homemade bread to go with it, either baked bread or more often nowadays flat bread.

Just make a dough the same as above but section into bigger balls and roll out flat and then fry in a frying pan.

I'm going to make my own butter one day too when I cba.

Faster · 09/10/2018 11:35

@Eliza9917 oh thank you for that! Really kind of you! And it’s absolutely on the menu tonight, DS and I are a little under the weather and proper chicken soup is what we’re needing ♥️

Eliza9917 · 09/10/2018 11:57

@Faster, You're welcome. At the slightest hint of a sniffle I make a big pot of this and then the illness doesn't really kick in (usually). Just make sure you use plenty of onions, garlic and thyme. I was going to have a google today to see what other herbs are good for a cough (as that's what DP seems to be coming down with) and add those in. Just google for your particular symptoms. I hope you both feel better soon.

Faster · 09/10/2018 15:36

Ive made a decent sized pot of it, smells and tastes divine! Thanks

seventhgonickname · 09/10/2018 15:42

Eliza9917 · 09/10/2018 16:01

@Faster, Brilliant, Grin I hope it makes you both better :)

PoesyCherish · 09/10/2018 16:04

Am making a beef goulash for dinner this evening. I'm on a diet so have left out the wine. It's currently cooking and it smells gorgeous. I can't wait to eat it when DP gets home from work.

Isitwinteryet · 09/10/2018 16:07
