I'm on the ball today, made a potato hash which is ready to be heated once the girls are home from school. My stomachs already rumbling for it lol.

What's on your menu for today?

My kids had salmon, homemade vegetable sauce and rice. 😇 and then a chocolate muffin which was definitely not homemade

DH is working late so I will make myself some kind of chicken stir fry or something when kids are in bed.

Sleepy, batter the full size chicken breasts with a rolling pin until they're about 1cm thick, dredge in beaten egg and breadcrumbs with a bit of salt and pepper mixed in, and fry a couple of minutes a side until brown and crispy. Serve with a salad and lemon wedges.

You can go one step further and take the fried cutlets and put a slice of ham and cheese on top of the ham. Stick the whole concoction under the grill until the cheese is melty and toasted Grin

I have my main meal at lunchtime on Mondays, so DC2, DM and I had chicken, peas, sweetcorn and noodles in chinese curry sauce. DH and DC1 will have theirs later. DC2 will probably have a little bit more, or a toasted teacake / crumpet or similar.
