And yes, it's illegal to do that in Australia, probably in other countries too - it's only because it doesn't get that hot that often that it isn't illegal in the UK but I expect that if something were to happen to a child left alone in a car, the parents would be charged with criminal neglect or whatever it's called. It's not like you were watching out the window the whole time, is it? No, you were too busy thinking of yourselves.

We did similar in Spain but...

The car was in a locked yard.
It was in the covered car port, so shaded, with all doors open.
DH and I weren't off shagging, we were in my Dad's pool which was only a few steps from the car port.
We kept checking in on him every few minutes and we were at the car in seconds when he woke up.
Both times when we got changed in and out of our swimming gear, one of us stayed outside with him while the other got changed so he was never left alone.

So I think YABU OP.

Alway been told that on a hot day it could reach up to 20 degrees (farenheit) hotter in the car in a half hour.

SO if it was 75 degreees outside could be up to 95 in the car.. Would have been stifling even with the windows open.

I left my DS asleep in the car on the drive yesterday. It was breezy and the windows were open. I kept the front door open and checked every couple of minutes. I don't think that's a problem. Leaving him for a shag would have been weird.
