What are you cooking for Easter lunch?

Looking for some inspiration that isn’t lamb. Don’t fancy a roast but want something a bit special.

I might suggest a takeaway as we haven’t had one for nearly two years and I don’t want to cook. Thai, maybe.

Noodles or soup, normal kind of lunch. Never really celebrated easter beyond chocolate and DIY!

I'm doing roast sirloin of beef, Yorkshire puddings, mash, bovril roasties, spring greens and carrots. I'll be doing a proper meat gravy with the juices! Looking forward to that!

Watercress and tahini soup, asparagus and pesto feta tarts with roast potatoes, roast tomatoes and purple broccoli, chocolate tart with raspberries and blueberries. Vegan and gluten free.

Leg of lamb with roasties, carrots, purple sprouting and asparagus followed by lemon posset. Whilst the lamb is in I'm going to roast some of the bargainous Lidl 15p shallots to make an onion and feta tart on Monday.

@Londonmummy66 would you mind sharing your onion and feta tarte recipe please? I’m heading to Lidl this morning to pick up some cheap shallots as well.

Beef wellington-using the other half of the whole fillet I bought at Christmas. I did actually plan to do this when I bought it!

No idea what to do for pudding, but I have plenty of ingredients

Pudding update…I made a pavlova base, and will make a lemon cream topping for it as that will use up the egg yolks to make the lemon curd.
Thought that would be nice and light to follow the beef wellington

We're going to my parents, not sure what they're cooking but I'm a vegan and am taking an ostera cake, and buns as my contributions for pudding, along with a leek and tomato foccacia.
I hope they don't do lamb.

I have no idea what we’re having but the main meal will be tonight. Always feel kind of pressured to do lamb & all the trimmings which is daft as you can cook what you like! It’s every other ad mentioning Easter Sunday lunch for 300 lol 😂 DH said he’s happy with beans on toast!

I’m doing both lamb and beef as have fussy eaters who don’t like lamb - who even are they 😂😂
Roast potatoes, honey parsnips, roast carrots, tender stem broccoli and Yorkshire puddings with red wine gravy.
A lovely bottle of Barolo is breathing already.
Making an apple and blackberry cobbler for dessert with ice cream or custard.
Really looking forward to it.

Slow cooked shoulder of lamb here with Yorkshire puddings, roast potatoes, carrot and swede and creamed leeks.
White chocolate and raspberry cheesecake (Mart Berry recipe) with some mini eggs on top along with the raspberries!

No inspiration for you here as it wouldn’t be Easter without lamb, which is my favourite meat. We actually had our Easter meal last night as we are on holiday in the US and are going to a baseball game this afternoon so no time to cook a roast. We had the lamb (one person who doesn’t eat lamb had steak), roasted carrots, green beans and asparagus, and the most amazing potato gratin. Always red currant jelly. Bonus for me was wine as I’d given it up for Lent! There was apple crumble for dessert but I’m not keen. Today we are making waffles and bacon for brunch before the game and either leftovers or Chinese takeaway tonight.

If they're hosting and want lamb then they should be able to have it. Do you feel the same about chicken, beef etc? If people didn't eat lamb there would be hardly any of them in the fields anyway as farmers couldn't live on wool sales alone.

There are several vegans in my extended family but they have to deal with seeing others eat meat because the majority like it.

That's a delicious cheesecake, one of my go to recipes.

I just chucked something together last time I had a glut of them but I think this is what I did.

Peel and roast 2-3 bags of shallots in olive oil (they are currently in the oven). Leave to cool. Cut into long strips.
Sheet of puff pastry - score a narrow border and then use a fork to prick the centre before spreading pesto over the middle section. Arrange sliced shallots on top. Crumble about 2/3 of a block of feta and scatter across top of tart. Milk wash the border and bake at 180 for about 30 minutes.

I find it serves 6 with a salad and new potatoes for dinner but I'm taking it as a starter to supper at a friends tomorrow so it will serve 8 there. It also reheats well in a microwave so if you're feeding 4 you can have a bit for lunch later in the week.

Roast leg of lamb spiked with garlic, rosemary and anchovies. Gratin dauphinois, ratatouille & spring greens with a red wine gravy.
First course is asparagus mousse using the first of this year's locally grown with honemade melba toast.
Pudding is blackberry and apple crumble with clotted cream.

Yeah, I rather think vegans would prefer there to be no lambs in the field than giving them life just to kill them shortly after. I don’t really get that argument. Breeding isn’t compulsory and animals don’t want to die.
