What’s for Dinner/Tea?

I don’t fancy what’s on the meal plan*! I’ll probably end up having it, unless someone inspires me - so, what are YOU having (or what’ve you had) for dinner/tea tonight?

  • it was meant to be omelette, wedges and salad. I just can’t be bothered 😭 When I win the lottery, first thing I’m doing is employing a personal chef!

I've got the next few days off work and it's been a slog, so I am going to let the good people at Turtle Bay take the strain! A few small plates and a vino for me.

It’s fend for yourself here tonight. Kids are 21 and 17 though so perfectly capable of making something for themselves. Eldest has a drum lesson so can even buy something on her way home. DH isn’t feeling great so he’s gone to bed and I have darts tonight so will be getting fed there. It’s fajita chicken with rice there tonight apparently.

We’ve had Chinese chicken and noodles in the slow cooker. I’m mid way though night shifts so made a double batch and we’ll be having it tomorrow as well.

Still on train home so DH turn to cook - chicken thighs with Nando’s peri peri sauce in the oven with some wedges. I hope!! 🤞

I was going to make pizzas using pizza express pre-made dough but just realised we’ve not got the mozzarella cheese.

I’ve been doing really well with dinners - we had homemade soup and cheese scones yesterday. I was thoroughly impressed with myself. Trying to maintain the momentum.

Cajun chicken with Mexican rice tonight. Dh is making it. Bliss.

Tomorrow night is sausages, smashed potatoes (baby potatoes squished down and roasted) onions, butternut squash (frozen cubes thank you Asda) with tenderstem broccoli. That was in the Asda magazine and I made it last week and it was delicious although I am tinkering with the timings a little. I will be making that.

@Simonjt if you have a link to the Brazilian black bean stew recipe could you post it? My mouth is watering now reading all of these dinners.

Lovely loaf of bread is just out of the oven. I'm having some of that with red pepper soup followed by a piece of apple cake and custard 😀

@DarkTreesWhisper no link I’m afraid, but an altered recipe from a friends Brazilian granny. Just beans, onion, garlic, cumin, bay leaves, oregano, cayenne pepper, ground coriander seeds, salt and veg stock. It does need to cook low and slow.
