I’m making a gorgeous haddock, leek & parmesan risotto - a family favourite, worth the tedious stirring! 🤣

Risotto here too - celeriac with caramelised crispy onion and lots of parmesan flakes! Yum!

We needed to go shopping but the roads are.dreadful so have taken the opportunity to empty part of the freezer and store and make room for Christmas...............

Today we made crumpets for lunch and a sausage and bean casserole for supper.

Tomorrow we have English breakfast (without eggs) and then for dinner roast chicken with freezer veg (Inc leeks in cheese which I'd made and frozen) .

I love a crumpet but they’re hideously low in nutrition! 😂

Similar - Birdseye frozen chicken pies and random veg left over from the week. I couldn’t face going to the shops and the delivery is coming tomorrow night. We’ll have risotto tomorrow with the rest of the leftovers. Fully hibernating this weekend.

I'm trying to eat a bit healthily for a few days. I pigged out a lot this last week for various reasons and need to lose a few pounds before Christmas (hopefully). So M&S healthy and balanced Thai red chicken curry with extra homemade cauliflower rice and salad leaves.

I'm full for now....

Oooh.. we’ve tried that one a few times. It’s nice but honestly nothing beats this recipe! Worth the effort and stirring for sure.

I must remember that justification! 😂 There’s nothing better than a buttery crumpet. I like the M snd S ones which will cook to a slight golden crisp on the top and base.

I heard that crumpets are another 'junk' food that along with instant porridge can't now be advertised before the watershed - is that right?

Can't beat them though with loads of butter and jam!

Don’t know about the advertising but I do do know they don’t have a nutrient to save themselves with. Still love ‘em. Am just making a mental note to have one on Christmas morning. I’ll leave the sslmon and champagne to the others. It’ll be hot tea and buttery crumpet for me!

We had leftover Chinese takeaway from yesterday. I also made a chicken soup with the stock and juices from the chicken I roasted on Thursday and a few veggies, but we will eat that for lunch tomorrow. DH has just been out to collect a 'Too Good to Go' bag from the Co-Op so I have just had an apple danish and he has just had a pot of pineapple.

For those that asked:
Pork and cider casserole - dice pork leg and dredge with flour about 600g for four then brown in batches until golden. Add 300gish shallots or small onions, a 500ml bottle of cider and the same amount of chicken stock. Add some thyme if you have it and season. Lid on, in the oven for an hour lid off for another 40 minutes or until reduced. Freezes well and is better made the day before imo.
Baked mash (credit to Mr. Oliver) - make mash, grate cheese (Red Leicester ideally but whatever is to hand). Spread grated cheese over the bottoms of dish then apply mash. Grate nutmeg all over the top and push lumps of cheese into the top to make cheesy bombs of deliciousness. Put it in the oven for 30 minutes. This is also great with colcannon and I sometimes do it in muffin tins too which creates perfect mash muffins!
Caraway cabbage - derib Savoy cabbage then slice thinly. Melt a good lump of butter in a frying pan and put caraway seeds in. Pop the cabbage and a splash of water/white wine if it’s already open in and cook until the liquid boils off.

Eat all of it.
