I’ve just started cobbling together a leek and chicken pie using an assortment of freezer odds and ends.

Dh is defrosting the freezer in the garage, so tonight’s dinner is a mix of food that we can’t fit into the kitchen fridge/ freezer. Tomorrow’s dinner is currently braising - pot roasted brisket and I will make a crumble out of the dehydrated frozen fruit, found in the bottom of the freezer.

Tonight, however, I am alone with my 3yo and 1yo so the best I can muster is fish, baked potatoes and veg 😂 I’ve got a mince pie on standby for after bedtime though.

Oven pizzas (plain cheap ones that I’ll pop some chorizo and jalapeños on one and keep the other one plain) and Chinese marinated chicken drumsticks.
definitely not healthy or balanced but dc have been cooped up most of today so they requested a special treat/movie night dinner and that’s what we’ve got in the freezer. Also got some microwave caramel popcorn to dig out of the cupboard if they fancy it afterwards but they’re not too fussed.

Dh is working tonight so it's just me and 3dc. He's asked if we can get rid of freezer odds and sods because he needs the space (he makes Xmas dinner, he's pre-making tarts, Yorkshire puddings, gravy etc next week).

So to support dh in his pre-Xmas empty freezer needs, between 4 of us we're having:
2 chicken kievs
1 portion of chilli
2 portions of unknown substance (I think it's beef stew but not 100%)
A handful of wedges
A handful of oven chips
A bag of frozen (cooked) new potatoes
1/4 bag of frozen green beans
1/4 bag frozen peas
1/4 bag frozen sweetcorn

Breakfast-for-dinner tonight: bacon, eggs, sausages, hasbrowns, beans. Lazy but also fab on a miserable evening like this one!

Tomorrow night will be baked potatoes with some of DH's excellent homemade chili on top and a ton of cheese. Not a terribly healthy weekend but comfort food is a necessity when it's dark, cold and wet.

DH has only just got in from a very trying night and day trying to get his HGV to the ferry port. Ferries not sailing meaning another long saga involving Operation Stack. He’s gone for a shower, so tea will be nice and easy.
Glad he’s home safe.

Had a big mug of leek and potato soup and a slice of banana cake for a late lunch, so not really feeling hungry. Can't be bothered with dinner. Probably just more cake!

@mitogoshigg it's very much not authentic - I invented it a while ago in the hope my fussy kids would accept it as an alternative to the interminable spaghetti bol. Sweat 3 chopped onions, grated ginger and 1-2 grated carrot in ghee. Add minced garlic and spice blend of choice. Fry off a bit and then add a pack of chopped chicken thighs. Fry a bit more, stir in half a carton of passata and a chicken stock cube, and a couple of teaspoons of almond butter. Bubble up and then gradually add some plain yoghurt or skyr (maybe a cupful?) Splash of water if it's not runny enough. Simmer gently 20 mins, check seasoning. Quantities are all approximate!

Definitely feeling the cold weather eating though - I did the online shop today and bought casserole, curry and pasta ingredients along with a piece of pork for a roast tomorrow. Lots of hearty food!

Toad in the hole, with baked potato

Peppers, onions and tomato 'stew' ill throw in some spinach at the end.

Left over 'stew' ill blitz into soup for tomorrow. Win win.

Homemade chicken madras and rice. White wine with it. Friend gave us a pistachio and chocolate panettone so that is pudding sorted out.

DH requested a cottage pie, chucked the remains of a bottle of red in it, mash and a cheese and breadcrumb topping. Made double quantities so I have the makings for a quick tea another night.

My own invention. Mushrooms, pepper, onion, spinach and garlic mixed with a cheese sauce and pasta. DH has just said he'll do it. Good point is I can continue reading my book, bad point he's got to work out how to make a roux sauce!

GOAT curry, as requested by DS. No actual goats involved; it's a kind of korma-ish chicken curry with almond butter in it. DS says it's his absolute favourite, hence the name.
