What wintery dish are you cooking today?

I've got time today to pop to the shops and put a stew or something in the oven.
It's so cold today, so the idea of the oven on, slow cooking something is appealing.

Im here seeking inspiration and trying to find some joy in this freezing weather.

That sounds so lovely and cosy. I wish someone was here cooking me an apple and blackberry crumble. Probably not the suggestion you were hoping for but that’s what I really want now!

Chilli here tonight. Fortunately it's already cooked, just needs heating. Last night was a Greek Fasolakia with chicken which is stew like.

I'll be having from the freezer a batch-cooked lamb tagine, which was made in the slow cooker.

Diced lamb shoulder, usual spices, tomatoes, onion etc. and tinned chick peas.

I did a shepherd's pie last night which we had for dinner and I will probably have for lunch as well.

Tonight is 'clubs night' so it's baked potatoes in the oven with whatever people fancy in them. It feels like baked beans and cheese weather.

Moroccan (lamb) stuffed aubergine topped with pine nuts, greek yoghurt and coriander for dinner. Although it's a North African dish, it's so good for cold nights!

Lunch is egg and bacon lardon salad .

This one is closest to how I do it - I wing it a bit depending on the consistency and flavour I want though as you can't really go wrong. Sooo delicious.

I made creamy sundried tomato chicken- it has broccoli and spinach in it so the colour isn't great and the lighting was crap.
But by eck it were lovely!
Served it with a bit of brown rice.

Sausage pasta with some lovely sweet chilli sausages from the butcher squeezed out their cases and fried. Tin of chopped tomatoes, olives, bit of creme fraiche or something as dc like that. Grill with mozzarella on top. Yum.

Beef casserole in red wine cooking very slowly in the oven, along with a rice pudding. The bonus is that the heat from the oven is warming up my cold, north facing kitchen.

Using up the fridge and cupboard stock for a few days before dh birthday this weekend.

We're not doing a particularly wintery dish today, but if I were making one I love a good cheesy pasta in January - I'd use up any leftover cheeses, including some of the Stilton. I add whatever I fancy to make it a bit more interesting: today that'd probably be diced pancetta fried 'til crispy, pickled jalapeno peppers, and maybe some mushrooms too. Mustard and white pepper in the sauce.

Extra cheese, including parmesan, on top.

Finally, little bit of smoked paprika sprinkled over the whole thing.

A fish pie always goes down nicely.

Our dinner today is going to be piri piri chicken with sweet potato wedges and roasted tomatoes, courgette and red onion. I will make a yoghurt dip to go with the wedges.
